Need a simple summer side dish? Make Grilled Potatoes! This 3-ingredient recipe transforms regular baby potatoes into a golden and buttery side dish to pair with your favorite grilled meats and proteins.

Potatoes are my love language. It doesn’t matter if they’re mashed or cut into fries and wedges, or cooked in the Instant Pot, oven, or microwave… I never get tired of their buttery-soft centers and addictive flavor. Plus, they’re a blast to play with because they take on any flavor you throw at them!
And when summer arrives, I can’t get enough of this Grilled Potatoes recipe. By grilling baby potatoes dressed in oil and salt, they become incredibly crisp on the outside and pillowy soft on the inside while soaking in the natural smoky flavor from the grill.
As a bonus, grilled baby potatoes don’t need to be babysat once they hit the grill. This gives you plenty of time to focus on the grilled chicken, burgers, or sausages and to prepare more summery sides, like broccoli cauliflower salad, instead. In the end, you’re left with a hearty side that pairs well with all of your favorite meals!

Ingredients
Baby potatoes - While I love making this recipe with halved baby yellow or red potatoes, any variety of potatoes can be grilled. Use red potatoes, Russet potatoes, sweet potatoes, fingerlings, Yukon gold potatoes, and more.
Olive oil - Oil is important because it encourages browning, tenderizes the inside, and prevents the potatoes from sticking to the grill.
Salt - For flavor. To jazz up the flavor, use any of the seasoning ideas in the FAQs below.
Step-by-step instructions
Step 1: Season the potatoes. Place the sliced potatoes in a bowl, then add the olive oil and salt. Toss to combine.
Step 2: Grill. Add the potatoes to the preheated grill basket and cook until they’re lightly charred and fork tender. Enjoy!
Tips and FAQs
- The grill time will vary depending on the size of your potatoes. You’ll know the potatoes are finished cooking when they’re fork tender and lightly golden and charred on the outside.
- Use a grill basket or grill pans to prevent small potatoes from falling through the grill grates. I got my grill pans from Target, but you can find them at Lowe’s and Home Depot as well.
- No grill pans or baskets? Use aluminum foil instead!
Tip
Baby potatoes are easy to grill when they’re sliced in half. For larger varieties, slice them into fourths.
Do you need to boil the potatoes before grilling?
Boiling the potatoes in a pot of salted water for about 5 minutes can infuse them with more flavor and help them grill faster. But because the potatoes are sliced into small pieces, boiling is unnecessary for this recipe.
Should you peel potatoes before grilling?
It’s up to you! I like how the peel keeps the soft potato flesh intact while grilling, but you can peel them in advance if you want the potatoes to be extra soft.
What seasonings go well with potatoes?
Oil and salt will yield some pretty incredible potatoes but in case you want to jazz up the flavor, turn to any of these seasoning ideas instead:
- Dry seasonings: Season the potatoes with a mix of paprika and garlic powder before grilling.
- Fresh herbs: Toss the potatoes with fresh rosemary, thyme, sage, basil, oregano, and/or parsley before grilling.
- Dry herbs: Use dry herbs instead of fresh ones if that’s all you have at home.
- Cheese: Finish the grilled potatoes with a sprinkling of freshly grated parmesan cheese.
What can you serve with grilled potatoes?
Add a little excitement to the potatoes by serving them with a tasty sauce on the side or drizzled over top. Zough sauce, chimichurri, ketchup, chipotle aioli, and pesto are all great options!
To make the potatoes part of a well-rounded meal, serve them with more grilled recipes and proteins. They pair perfectly with grilled chicken thighs, homemade bison burgers, garlic salmon, and endless other mains.
Did you end up with too many leftovers? You can put the leftover grilled potatoes to use by tossing them in a potato salad or baking them into a frittata for breakfast.
Storage
Refrigerator: Any leftover potatoes can be stored in an airtight container in the fridge for 4 to 5 days.
Reheat: Reheat the grilled potatoes in a skillet on the stove, in the microwave, or in a 350ºF oven until heated through.
