Hi! I’m Erin, author of The Almond Eater. Welcome to my site! Currently, I reside in Pittsburgh, PA with my husband and our dog. I originally created this site to share random things about my life (think: blogging back in 2013), but it has since morphed into a food blog where I share healthy, delicious, quick, and good-for-you recipes. I’ve always loved cooking, and I fell head over heels for food photography in 2015, and I’ve been creating recipes ever since!
WHAT YOU’LL FIND ON THE ALMOND EATER
At The Almond Eater, you’ll find plenty of vegetarian+vegan recipes, and here’s why: I believe everyone’s body is different and that we all thrive by eating however we feel is best. In January 2019, I set out to do my second Whole30, but 12 days in something just didn’t feel right. My body missed carbs significantly more than it did the first time I did Whole30, and I was eating so.much.meat.
Ever since then, I’ve eaten less meat, and it’s been so much easier than I ever thought possible (this is coming from a girl who used to eat meat every day, sometimes multiple times per day). If you’re in the same boat as I was and don’t want to completely eliminate meat but want to cut back some, this is the site for you! “Meatless Mondays” are about to get a whole lot easier! I hope to inspire you to cook healthy, flavorful, veggie-focused meals and to make cooking with tofu (or other “weird” meatless ingredients) less intimidating.

Can I still find meat recipes on your site?
YES! I have plenty of healthy, tried and true paleo+Whole30 recipes, but the majority of my newer recipes are vegetarian. My three favorites are my low carb chili, whole30 chicken salad and Italian chicken meatballs.
A little more about me…
- I absolutely love grocery shopping (anyone else?!)
- I’m addicted to iced coffee–lattes, cold brew, bulletproof coffee–I love all of it
- Favorite foods: avocado toast (that’s a food in itself, right?), eggs, roasted chickpeas, kale, salmon
- Least favorite foods: mustard and pickles (I never use them in recipes because I can’t even stand the smell!)
