Hey guys! It’s Thursday which means it’s almost Friday which means I am a happy gal today. I did want to make a quick note about my post on Tuesday. Though calorie counting didn’t work for me, I definitely think it can work for people. I think it’s good to be aware of what you are eating but focusing solely on the number is what I’m not all about. …ok sorry, had to get that off my chest. Now onto today’s recipe!
In yesterday’s WIAW post, I shared my dinner from the 4th of July: meatballs, potatoes and broccoli. Though I took photos of my food-making process, I wasn’t sure if I wanted to share the recipe. I think Christine said it best: sometimes a recipe is so simple you don’t think it deserves to be called a recipe. I don’t know about you guys, but sometimes a quick spice switch-up or a new way of cooking something can make all the difference as far as taste goes. And that is why I’m sharing these extremely simple roasted potatoes with you.
Growing up, my family ate red potatoes just as often as regular Idaho potatoes. Or, at least I think we did… I have a terrible memory people! I can’t help it. Maybe I just remember the red potatoes because they’re so darn good. MMMM yes, yes that’s it. No but we really did eat red potatoes and I would ALWAYS get excited when my mom would tell me that’s what we were having for dinner. I mean, how can you not be excited over red potatoes?
Normally, I would just boil a pot of water, throw the potatoes in, wait until they’re soft and serve them with a bit of butta (read: butter). Now, there’s NOTHING wrong with that–I actually really like them that way–but sometimes ya just need a little switch and a bit more flavor. I stood there, staring at my spices cabinet like I always do, wondering what I could add to the potatoes to give them a little kick. Then I spotted the breadcrumbs. BOOM, done. Basically anything covered in breadcrumbs tastes better, though not toooooo many breadcrumbs or else you can’t even taste the actual food.
It was actually Miguel’s idea to roast the potatoes. Occassionally, he has good ideas. I’M KIDDING—He always has great ideas, I’m just too stubborn to listen most of the time. So, I ditched the pot of boiling water and decided to roast the potatoes instead. Obviously I was pleased with the outcome or else I wouldn’t be sharing the recipe with you all.

PrintRoasted Red Potatoes
- Yield: 2-4
Ingredients
- 2 lb red potatoes
- 1/3 cup olive oil
- 1 tsp garlic powder
- 1 tbsp bread crumbs
- Salt and pepper
Instructions
- Preheat the oven to 400°.
- Cut your potatoes into cubes and place them in a large bowl.
- Add oil, garlic, salt and pepper and stir.
- Last, add bread crumbs.
- Place potatoes onto a baking sheet and into the oven for approximately 25 minutes.
- Enjoy!

I think I actually like red potatoes more than any potato but I never buy them, which is so silly! I should hop on that. And corn. I want some corn on the cob.

My inner potato lover is drawn to this recipe <3. And you know what?! I think potatoes taste best when they're prepared simply. I'm sure this extravagant twice baked potatoes/hassleback potatoes on Pinterest are delicious, but I don't have time to have the oven on for 2 hours and a simple roasted potato that's seasoned well and gets crispy in the oven is just as good to me. Love the addition of breadcrumbs!

Mmmm love roasted red potatoes! I think there’s something about them being mini potatoes that makes them infinitely more exciting than a typical white potato. And the extra pop of color is a plus, too!

As much as I love potatoes, I’ve never roasted them! To me, roasting = a boatload of time, but really, 25 minutes is nothing. Arman always roasts his potatoes and they look so good haha. So thanks for sharing this recipe!

Breadcrumbs on roasted potatoes??? Genius!! How have I not thought of that before, since I love throwing breadcrumbs on just about anything haha. Weirdo, but more than ok with it 😉 My mum tried to introduce us to other things growing up, but unless they were idaho, my brother and I weren’t having them (that may have been me more than him, but I’m throwing him in there too). It wasn’t until I met Joe almost 4 years ago now that I really started trying new things and finding that I liked them. Go figure 😛 And my memory is horrendous. I have to write everything down in my planner AND in my phone with alerts to have a hope of remembering everything. Problem.

I think you and miguel are very similar to me and my man. It makes me laugh sometimes 🙂 I am trying to open up and listen more too. These look great, and I actually prefer red potatoes over white….my family had them a lot growing up too, maybe that is why. Either way, YUM!
