Pizza Toast is like a personal size pizza with your favorite toppings. The best part is that it only takes 5 minutes to make!
Picture this: it’s Sunday morning. You and your friends threw a crazy, wild party the night before and there are beer bottles and leftover wine everywhere (which you obviously are not mad about because WINE). Despite the mess, there’s also leftover pizza, and lots of it. You grab a slice and devour it in seconds and can’t believe how good leftover pizza tastes. Oh and yeah, pizza for breakfast is totally ok.
Second scenario: it’s Wednesday morning (today) and there’s no pizza for breakfast. You immediately start crying.
STOP CRYING because now you can have pizza in 5 minutes! Not a whole pizza—just enough to keep things healthy. …..what? Pizza toast! It’s all the rage in my kitchen, and it should be in yours too.
Ok I’m done with the fiction novel writing. How’s everyone’s day? My Wednesday is full of random stuff, including finalizing details for my bachelorette party (more details to come), confirming our choice of music for the wedding, working on freelance stuff, and possibly making something chocolate-y if I have time. MMMMM, I can dig it. I can also dig pizza. Yep, we’re doing it—we’re talking about one of the greatest foods ever.
Bold statement, I know.
I think I love pizza because it’s comforting and versatile. Oh, and cheesy. While I obviously love homemade pizza, I don’t always have time to prepare an entire pizza and honestly, sometimes I just want a slice! One singular slice. What’s a gal to do? Whip up this pizza toast of course.
Side note: every Friday night Miguel and I eat pizza—either we order it or we eat a store bought pizza. Two Friday’s ago I made this pizza toast instead and he said, and I quote, “This tastes just like pizza. We should do this every week.” Sooooo basically he’s saying it’s as good as ordering pizza and it’s cheaper and pizza toast is just kinda cute. Ok fine, I added in the “cute” part.
Similar to pizza, this toast is totally customizable. I used marinara sauce, mozzarella cheese, tomatoes, pepperoni, and fresh basil, but feel free to use whatever toppings your little heart desires. It’s great for breakfast, lunch, dinner, a snack, and maybe even dessert if pizza for dessert is your thing. …which is probably should be because, no matter the time of day, pizza is always a good idea.Print
- Prep Time: 3 mins
- Cook Time: 2 mins
- Total Time: 5 mins
- Yield: 1
- 1 piece of bread
- 1 tbsp your favorite marinara sauce
- 1 slice mozzarella cheese
- 4 pieces pepperoni
- 3-4 grape tomatoes
- 1 basil leaf
- Heat broiler on high.
- Place bread in the toaster.
- While bread is toasting, slice tomatoes in half and chop basil leaf.
- Remove toast from toaster and top with sauce, cheese, pepperoni, tomatoes, and basil and place on a baking sheet.
- Broil for 1-2 minutes or until cheese has melted.
**Recipe is per piece. Feel free to double, triple or quadruple the recipe as needed.
