This minimal ingredient Spicy Cucumber Salad recipe is a healthy side dish and perfect for any family gathering.
Who’s ready for the fourth? Anyone? I am…. ish. You see, I’m not having people over in my one bedroom apartment and therefore don’t feel the pressure of being the perfect “host”, though I imagine one year I will. Today I’ve got an easy peasy cucumber salad recipe that comes together in no time, because sometimes people do appreciate healthier food at a cook out.
Truthfully, I’ve always enjoyed cucumbers, though eating them plain jane sometimes feels a little…boring. So today we’re SPICING things up with this spicy cuke salad made with tequila lime seasoning! The kind I bought was from Whole Foods (just Whole Foods brand) and it was unreal, but I know that many other grocery stores sell it as well. I tried to use an even more convention spice such as cayenne or chili powder, but neither provided the results I was looking for. The tequila lime seasoning though? PERFECT.
Oh and yes, this cucumber salad IS as easy as it sounds. A few years ago I would combine cucumbers, lime juice and mint leaves in a bowl and eat them as a snack on days when I didn’t consume enough fruits and/or vegetables. I still love that combo, and if you want to give it a try go for it, but this spicy cucumber salad is more suited for parties and/or as a side dish in my opinion.
You’ll simply chop up the cucumbers, drizzle them with lime juice and stir, and then add the tequila lime seasoning, a pinch of salt and fresh cilantro. I know I call the majority of my recipes “easy”, but this really, truly is. Minimal ingredients and minimal time—MY kind of recipe. - 2 cucumbers, sliced
- Juice of 2 limes
- Pinch of salt
- ½ tsp tequila lime seasoning
- 2 tbsp cilantro, chopped
- Slice cucumbers and place them in a bowl.
- Drizzle them with lime juice and stir so that they are coated, then add the salt, tequila seasoning and cilantro.
- Stir until flavors are mixed, and enjoy!
