Hi there! Thanks for stopping by The Almond Eater. Here you will find healthy breakfast, lunch, dinner, dessert, snack, and drink recipes that require just 30 minutes or less. Why 30 minutes? Because, I don’t know about you, but I’m pretty lazy and busy and occasionally impatient i.e. I don’t want to spend 22 minutes chopping vegetables and then another 42 minutes waiting for my food to cook. To be honest, food is the last thing I want to stress about. Just sayin’. Every day food should be fun, delicious, healthy, and QUICK. So, 30 minutes it is! Here, I hope to inspire you to get a little creative in the kitchen, to not be afraid to experiment with flavor and to add variety to your meals, because packing turkey sandwiches every day in your lunch for an entire year straight gets a little old (trust me, I know).

-I grew up in Ohio and now live in Pittsburgh with my fiancé and our pup Layla.
-I don’t follow any particular diet and constantly practice what I preach, which is “listen to your body”. That said, I try to keep things on the healthier side, because if I always ate what my body wanted I would probably turn into a giant piece of chocolate cake.
-Foods I could (and typically do) eat every day: iced coffee, kale, chocolate, almonds and nuts, avocado
-Foods I wished I liked but don’t: pickles, mustard flavored anything, beets, oatmeal (it’s a texture thing)
