The bright colors of a Greek salad meet the satisfying, meaty bites of my Greek chicken skewers in this Air Fryer Chicken Recipe. It’s like a warm, filling Greek salad that’s ready in less than 30 minutes!
I tossed diced chicken thighs and Mediterranean vegetables with olive oil and seasonings, then cooked them in the air fryer until the chicken was juicy and the veggies caramelized around the edges. To finish, I topped it off with salty, creamy feta and a scoop of hummus for dipping, giving me a colorful, flavor-packed dish I can enjoy with pita for lunch or rice for dinner.

Greek Chicken Ingredients
Fresh vegetables – Red bell pepper, red onion, and zucchini become tender in the same amount of time in the air fryer. Closer to the end of the cook time, I also threw in halved grape tomatoes. They get all juicy and blistered in the air fryer, naturally seasoning everything else.
Chicken thighs – I used boneless, skinless chicken thighs and diced them into bite-sized pieces.
Greek herbs and spices – Everything gets seasoned with dried oregano, onion powder, garlic powder, basil, dill, salt, and pepper.
Toppings – I love the salty bite of crumbled feta cheese and a scoop of my classic hummus on the side!

Variations
- Mix and match the vegetables – Diced eggplant, sliced yellow squash, sliced olives, and marinated artichoke hearts would be so good!
- Boost the protein by tossing a can of drained and rinsed chickpeas or cannellini beans with the vegetables and chicken.
- Change the hummus – Top the Greek chicken bowls with my beet hummus for extra color or my chimichurri hummus for the herby goodness.
How to Air Fry Greek Chicken
Step 1: Coat with oil. Add the chopped vegetables and chicken thigh pieces to a large bowl. Drizzle the oil on top and toss to coat.
Step 2: Season. Mix the herbs and seasonings together. Sprinkle them over the chicken and vegetables, then toss to combine.

Step 3: Air fry. Transfer the chicken and vegetables to the air fryer and cook for 12 to 15 minutes.
Step 4: Add the tomatoes. Add the halved grape tomatoes to the air fryer and continue cooking.
Step 5: Serve. Serve the warm Greek chicken and vegetables with feta cheese on top and hummus on the side. Enjoy!

Erin’s Tips and Tricks
- Cut the chicken and vegetables into even, bite-sized pieces so everything cooks in the same amount of time.
- Give your air fryer time to preheat. I usually let mine preheat while I’m seasoning the chicken and veggies (it only takes about 3 minutes).
- Want to double the recipe for meal prep? Double the ingredients and cook them in two batches in the air fryer.
- For extra moist and tender chicken, marinate the thighs in my Greek chicken marinade for at least 30 minutes before cooking.
My Pro Tip
The Cook Time Varies
The cook time will vary depending on the size of your air fryer. My chicken took closer to 15 minutes to cook through, but I’d suggest checking for doneness after about 12 minutes. Chicken thighs are done when their internal temperature reaches 165ºF.
Serving Suggestions
Greek chicken bites are one of my meal prep staples. I always serve them with crumbled feta cheese, a scoop of hummus, and pita on the side. You can’t go wrong with briny kalamata olives, fresh dill, and creamy tzatziki on top, too!
For a filling lunch or light dinner, pair the chicken and Greek vegetables with a scoop of my bone broth rice or some fluffy Instant Pot quinoa. They’d also be delicious stuffed into a pita or served over brown rice with crispy chickpeas, like in my Mediterranean hummus bowl.
Storage
Refrigerator: Once the leftover chicken and vegetables have cooled to room temperature, pack them into airtight containers and refrigerate for up to 4 days.
Freezer: The leftovers will freeze well for up to 3 months. Thaw them in the fridge overnight before reheating.
Reheating: You can microwave any leftovers or reheat them in a 375ºF air fryer for 5 to 8 minutes, or until the chicken is warmed through.

Air Fryer Greek Chicken

Ingredients
- 1 red bell pepper, chopped
- ½ cup red onion, chopped
- 1 cup zucchini, chopped
- 1 lb boneless chicken thighs, diced – approx 3 thighs
- 1 tbsp olive oil
- 2 tsp oregano
- 1 ½ tsp onion powder
- 1 ½ tsp garlic powder
- 1 tsp basil
- ½ tsp dill
- ½ tsp salt
- ½ tsp black pepper
- 1 cup grape tomatoes, halved
- 4 oz feta cheese
- Hummus
Instructions
- Add the bell pepper, red onion, zucchini and chicken thighs to a large bowl, then drizzle them with olive oil and toss to combine.
- Preheat your air fryer to 400°F (mine takes 3 minutes to preheat).
- Next, in a small bowl, stir the oregano, onion powder, garlic powder, basil, dill, salt, and pepper together. Then sprinkle the seasoning over the chicken and vegetables and toss to combine.
- Pour the seasoned chicken and veggies into your air fryer and air fry for 12-16 minutes. The cook time varies depending on the size of your air fryer. I suggest checking around the 12 minute mark, but mine took closer to 15 minutes.
- Last, add the tomatoes and air fryer for 2-3 more minutes.
- Sprinkle the chicken and vegetables with feta cheese, serve with a side of hummus and enjoy!
