Air Fryer Greek Chicken

- 1 red bell pepper chopped
- ½ cup red onion chopped
- 1 cup zucchini chopped
- 1 lb boneless chicken thighs diced - approx 3 thighs
- 1 tbsp olive oil
- 2 tsp oregano
- 1 ½ tsp onion powder
- 1 ½ tsp garlic powder
- 1 tsp basil
- ½ tsp dill
- ½ tsp salt
- ½ tsp black pepper
- 1 cup grape tomatoes halved
- 4 oz feta cheese
- Hummus
Add the bell pepper, red onion, zucchini and chicken thighs to a large bowl, then drizzle them with olive oil and toss to combine.
Preheat your air fryer to 400°F (mine takes 3 minutes to preheat).
Next, in a small bowl, stir the oregano, onion powder, garlic powder, basil, dill, salt, and pepper together. Then sprinkle the seasoning over the chicken and vegetables and toss to combine.
Pour the seasoned chicken and veggies into your air fryer and air fry for 12-16 minutes. The cook time varies depending on the size of your air fryer. I suggest checking around the 12 minute mark, but mine took closer to 15 minutes.
Last, add the tomatoes and air fryer for 2-3 more minutes.
Sprinkle the chicken and vegetables with feta cheese, serve with a side of hummus and enjoy!
NOTE: if you want to double this recipe so that it serves 4, you’ll need to air fry the ingredients in 2 batches.
