You guys, I’m going ALL IN with pumpkin this year. I’m talking PSL’s at least 3x a week and craving pumpkin-flavored desserts and snacks galore! Though I made a few pumpkin recipes last year (like this and this), my pumpkin cravings weren’t that intense, which I’m guessing is why I’m going pumpkin crazy this year. …hence this pumpkin hummus, which is a combination of a dessert and a snack.
This pumpkin hummus recipe is made with chickpeas, but other than that it’s the opposite of traditional hummus. Instead of tahini, it uses almond butter, cream cheese, maple syrup, and of course pumpkin. Oh, and because fall is the time of year when I encourage everyone to make my healthier homemade caramel sauce, I decided to drizzle some caramel on top of the hummus too. GETTIN’ WILD.
The tricky part about dessert-like hummus is figuring out what to serve with it. I actually just ate it atop some toast, but I imagine cinnamon pita chips would be really, really delicious with this pumpkin hummus as well. Then, last but not least, I topped it with a handful of pomegranate seeds. Not only do they add a nice color to this dish, but they also add a bit of a crunch. …always thinking about texture.
If you need a pumpkin-y snack, this is it my friends!
- 1 can (approx 15 oz.) chickpeas, drained and rinsed
- 1 cup canned pumpkin
- 2 tbsp cream cheese
- 2 tbsp almond butter
- 2 tbsp maple syrup
- ½ tsp cinnamon
- 1 tbsp pomegranate seeds
- Optional: 1-2 tbsp caramel sauce
- Place chickpeas into your food processor and pulse for 20 seconds or so, then the rest of the ingredients EXCEPT for the pomegranate seeds.
- Pulse until smooth, scraping down the sides of your food processor as needed.
- Transfer hummus to a bowl, add additional cream cheese and/or caramel sauce to taste.
- Sprinkle with pomegranate seeds and enjoy!
