Well hello there Monday, nice to see you. I’m so excited to share this garlic zucchini noodle pasta recipe with you, because though it’s healthy, it’s still quite decadent thanks to the combination of zucchini and regular ‘ole pasta noodles. YUM.
Speaking of healthy, can well all agree that there’s nothing quite like kicking the week off with a healthy meal? After all, we’re always eating (and I’m always sharing) desserts and cocktails by the end of the week, so it’s kind of nice to start the week off on a healthy foot. Thankfully, Bed Bath & Beyond is making eating and living a healthy life a little bit easier for everyone. I was fortunate enough to be able to try out a few of the items from their new Well Beyond collection, including a spiralizer and a nonstick skillet.
Being the organized person that I am (sarcasm—I’m approximately 3% organized), I like to keep my spiralizer in a shelf above my stove that I can barely reach. Rather than using a step stool or chair to reach things, I just kind of throw things up there and when I need to get something out of it, I simply jump up and down until I can grab what I need. I wish I was joking. With that said, the thing that stood out to be the most about the Well Beyond spiralizer is the fact that the blades are color coded (!!!), so you can easily tell them apart.
Ok so back to where I started—let’s chat easy and healthy dinners. Though I love to cook, I try to keep my weeknight dinners to 30 minutes or less (but you already knew that). I love this meal because it incorporates a vegetable (in this case, zucchini) right into the meal, so you don’t necessarily need a side of veggies. Of course you can—the more veggies the merrier—but if you’re feeling lazy like I was, this zucchini noodle pasta really is an all-in-one kind of meal. I paired it with garlic, butter, red pepper flakes, and burrata cheese for added flavor and mmmmmmm mmmmm mmmm is it good. I’m biased, but I like to think you’d agree. - 4 oz.* angel hair pasta (or pasta of choice)
- 1 zucchini
- 2 tbsp olive oil
- ½ lb. shrimp
- 2 garlic cloves, minced
- 2 tbsp butter
- ¼ tsp red pepper flakes
- Salt and pepper to taste
- 1 ball burrata cheese
- Fresh parsley for garnish
- Cook pasta over stovetop and then set aside. At the same time, use your spiralizer to spiralize the zucchini and then set aside.
- Heat olive oil in your skillet over medium-high heat; add shrimp and cook for a few minutes before adding in the garlic, butter and red pepper flakes.
- Next, add cooked pasta and zucchini noodles to the skillet and stir until everything is combined.
- Transfer noodles onto plate, add salt, pepper and burrata cheese.
