A healthy vegetarian meal—this Mediterranean Quinoa Bowl is filled with cucumbers, tomatoes, onions, and cheese and drizzled in a simple, homemade tzatziki sauce.
I realized the other day that I want to start eating more quinoa. That’s not to say that I never eat it, but I feel like I could be eating it a lot more frequently. Perhaps even replace some of my pasta nights with—gasp—quinoa nights. Not as carb-a-licious (love carbs), but definitely more protein-packed and overall just BETTER.
But first—my bachelorette party. I don’t think I ever updated you all on my plans. So, I toyed with a TON of different options—I wanted to go somewhere fun but also somewhere doable, aka I didn’t want to make my friends spend a bajillion dollars on a trip when I know they’ll already be spending money on bridesmaids dresses/wedding gifts/etc. I wanted somewhere warm but I also wanted to be near a city—as much as I love the beach, I didn’t want to JUST go to the beach every day.
My first thought was Puerto Rico. You know I love PR and I really love the resort where Miguel and I stay when we go. However, after flight+staying at that resort (because in my opinion nothing compares), the cost would have already been pretty pricey not including food, drink and spending money.
Basically, I’m the most considerate friend ever.
Besides PR, I really wasn’t sure where I wanted to go. I texted my friends and asked for options and my one friend suggested Nashville. I honestly hadn’t thought about it, but after discussing it with everyone we all agreed it’d be a cool place to check out. My maid of honor went last summer for a wedding and said it was super fun, it’s warmer there than it will be in Pittsburgh that time of year (i.e. spring/early summer) AND I’m hoping (fingers crossed) to book an Airbnb with a pool! HOLLAAAAAAAA. So yeah, Nashville it is! If anyone has been to Nashville, I’d love suggestions of things to do/places to eat, though I’m sure I’ll be asking one or two other times once it gets closer to the time when we’re actually going 🙂
As always, I must talk about the FOOD in this post—QUINOA, QUINOA, QUINOA. The only thing better than quinoa is quinoa covered in tzatziki sauce. So here’s what happened: I went to Trader Joe’s and spotted the tzatziki sauce sitting next to the hummus. I picked it up, read the ingredients list and decided to make my own version. If I happened to like theirs better, I would suggest to use TJ’s sauce because I’m not above that. As much as I did love theirs, I liked mine better. Mwahahhaa. It just goes to show that homemade ANYTHING is alway a step up from store bought.
Whether you make your own sauce or not, I hope you give this quinoa bowl a try!
- For the bowl:
- 2 cups cooked quinoa
- 1 cup cucumber, sliced
- 1 cup tomatoes (I used cherry, but any kind will work), sliced
- ½ cup red onion, chopped
- ¼ cup crumbled feta cheese
- For the sauce:
- 6 garlic cloves
- ½ cup cucumber
- Juice from ½ lemon
- 2 tsp fresh dill
- 2 mint leaves
- ½ cup plain Greek yogurt
- Salt and pepper to taste
- Place quinoa in a bowl; stir in tomatoes, cucumbers, onion, and cheese and set aside.
- To make the sauce: place garlic, cucumber, lemon, dill, and mint in a food processor and pulse until garlic is completely chopped and everything is mixed together.
- Transfer to a bowl and stir in yogurt; stir to combine.
- Drizzle sauce overtop quinoa and enjoy!
