Mediterranean Grilled Cheese Sandwich

Step up your sandwich game with this Mediterranean Grilled Cheese Sandwich. Tomatoes, feta cheese, onions, kale, and olives combine to form this healthy and filling sandwich.

If you love mediterranean flavors, you’ll die over this mediterranean grilled cheese sandwich. It’s such a fun way to switch up your sandwich game and it’s loaded with VEGGIES and yes cheese too, but VEGGIES which basically makes it healthy. I mean, right?

Growing up, grilled cheese sandwiches were my go-to after school snack or weekend lunch. They were simple, filling and oh-so-cheesy. I liked making them on my own, but I especially enjoyed when my mom would make me one because mom food is the best food, even when it is just a simple grilled cheese. However, plain grilled cheese can get a bit boring after awhile, so I thought I’d spruce things up a bit with this grilled cheese filled with mediterranean flavors. 

 

Mediterranean flavors are kind of the best aren’t they? When I think ‘mediterranean’, I automatically think of salads. I have NO idea why, because this flavor combination can be used in many different food forms, including sandwiches. 

MEDITERRANEAN INGREDIENTS

  • feta
  • kale
  • red onion
  • tomato
  • black olives

In most cases, the cheese is the highlight of a grilled cheese sandwich, but not this one! I’d say this one is special because of all of the other ingredients. Besides cheese, it includes tomatoes and kale and onion and California Black Ripe Olives. Why have JUST cheese when you could have all of that other fun stuff too? These add-ins make the sandwich healthier, more filling, filled with nutrients, even more flavorful, and the best part is that it’s just as simple. There are few things in life I enjoy more than a simple sandwich recipe. 

This sandwich is:

  • Cheesy
  • Healthy
  • Still considered comfort food
  • Vegetarian
  • Veggie-filled
  • Simple
  • Only 7 ingredients if you include the bread & butter

I’d say it’s kind of a must-make, wouldn’t you?

And here’s a cool fact about olives, so listen up! California black ripe olives are as good as they taste and contain Vitamin E, iron, Vitamin K, and fiber. They are packaged at their peak to preserve nutrients for year-round enjoyment. Who knew?! I didn’t. Olives are good tasting but they’re also good for you. Besides sandwiches, you could easily add them into salads, soups or casseroles.

Mediterranean Grilled Cheese Sandwich

This Mediterranean Grilled Cheese Sandwich combines all of the best ingredients into one unique sandwich recipe.

Ingredients

  • 2 slices bread
  • 1-2 tsp butter
  • 2 slices feta cheese
  • 1/4 cup kale
  • 3 red onion slices
  • 1 slice tomato
  • 2 tbsp California black ripe olives

Instructions

  • Butter 1 side of each piece of bread, then place one of them butter-side down into a skillet.
  • Add the cheese, kale, onions, tomato, and olives on top of the bread, then place the second piece butter-side up on top.
  • Grill sandwich on the one side before carefully flipping over and grilling on the other side until cheese has melted.
  • Remove and enjoy!

    The sandwich was pretty good, but the instructions weren’t very user friendly for a beginner cook. I’m trying to be better about cooking for myself with easy recipes, but I found myself constantly asking question about how to make a sandwich. What temperature should my burner be at? Approximately how long did it take your sandwich on each side? Is the top slice supposed to be butter up or down? These may be dumb questions, but as a newbie I had no clue to the answer. I ended up with not very melty feta, bread falling apart, and little burns on my bread. The flavors were pretty good though.

    I just made this…and it was fabulous! I had to make a few adjustments, according to what was available…I grilled both sides of bread first just to have a crisper “toast”, and I used Swiss, for lack of a better option for sliced cheese, and feta crumbles, I couldn’t find basil at my local store, so used spinach and sprinkled a little dried basil over the feta! I was surprised to have the Hubby ask for a second and then tell me(after being sick, he must be feeling better because this was the best thing he’d tasted in a long time)(he will still be sick tomorrow I’m sure!!) thanks for this inspiration!!

        Loved your input on this. I started making my grilled cheese under the broiler and never looked back. Looking forward to this version. May use some mayo-Greek yogurt. But some meaty cheese with the rest should be sufficient.

    I’ve never seen sliced feta cheese, the only feta cheese I can find around here is crumbled. I wonder if I could use that?

    I would use spinach instead of kale because I prefer it, but otherwise, I don’t think I’d change a thing!

    This was delicious! I had to make a few substitutions. So far I haven’t found kale in Poland( probably not in season) so I used fresh basil for the greens. Then I used a soft polish cheese but it melted well. Everything blended together so tasty I’ll definitely make this again.

    I have never seen feta cheese melt like that! Awesome. I love Mediterranean anything. I learned to like olives as an adult, but my 3 1/2 year old twins are well ahead of the game and love them now! Need to make this for them!

    Wow, this might be the most tempting grilled cheese I’ve seen all year! I don’t know about “favorite” lunch as a kid, but I certainly ate my share of turkey and mustard sandwiches…and these grilled cheese ones look about 10000x tastier than those!

    I loveeee olives. I always have. I used to put them on my fingers and eat them off. Kalamta olives are such a game changer in any recipe… also olive juice is great to add to salad dressing!

    Oh this looks insanely good! My mom made the best grilled cheese. She went heavy on the butter, I’m guessing that had something to do with it 😉

    Loved the ingredients in this sandwich (minus the olives which, along with peas and spicy things, is just one food I can’t seem to get into). Anything that includes a glorious amount of cheese on bread is right up my alley, though! YUM!!

    Someone told me the other day that olives are supposed to help you feel better if you’re nauseous. How’s that for a random fact? But no matter what they offer, I can’t get myself to like them. I guess it’s just one of those acquired tastes that I haven’t… err.. acquired 😛

    WOA – so much awesome flavor in this grilled cheese! I must admit, I’m not a huge fan of grilled cheese – but when it has tomatoes, feta cheese, onions, kale, and olives – I will chomp down on it!

    I’m not normally a big olive fan, but for some reason this makes them sound awesome. I love that whole combo you’ve got going on and would never think to put it in a sandwich. Yum!
