Peanut Butter Waffles

These peanut butter waffles are fluffy, delicious and made with whole wheat flour and plenty of peanut butter! The best part is that they don’t require eggs, so if you’re allergic or have simply run out, this recipe was made for you.

What do you do when your brother buys you a waffle maker? You make waffles, obviously. But what do you do when you start making waffles and realize that you’re out of eggs? You improvise. I mean, you don’t really need eggs to make waffles anyway. No seriously, you don’t. These peanut butter waffles are as fluffy as ever and turned out perfectly even without eggs.

  • They’re loaded with peanut butter, which just so happens to pair perfectly with maple syrup

HOW TO MAKE PEANUT BUTTER WAFFLES

Start by combining the dry ingredients in a large bowl then setting that bowl to the side.

Next, melt the coconut oil. You can do this in a microwave or over the stovetop.

In a separate bowl, use a fork or potato masher to mash the banana, making sure to get out as many lumps as possible. Add the milk, water and vanilla to that bowl and whisk everything together. Then, add the melted coconut oil and peanut butter to that bowl and stir to combine.

At this point, you should preheat your waffle maker and spray it with nonstick spray if needed. A light should turn on once it’s hot enough.

Mix the wet and dry ingredients together until you have a smooth batter. I like to use my 1/2 cup measuring cup to scoop the batter into the waffle maker. Cook the waffles until the waffle maker lights up, indicating that the waffles are fully cooked.

HOW MANY WAFFLES DOES THIS RECIPE MAKE?

The amount of waffles depends on your waffle maker and the size of your waffles. I found that when using a 1/2 measuring cup to measure out the batter, I ended up with 4 total waffles. Since the recipe calls for whole wheat flour, these waffles are a bit more filling than most, so 1 waffle per person should be enough.

CAN I MAKE WAFFLE BATTER IN ADVANCE?

Yes! You can make the batter ahead of time, then store it in an air-tight container in the refrigerator for up to 3 days. When you’re ready to make the waffles, take the batter out of the refrigerator and stir it really well so that the batter is nice and smooth.

Ingredients 

  • 2 1/2 cups whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cane sugar
  • 1/4 tsp salt
  • 1 ripe banana
  • 2 tbsp coconut oil
  • 1/4 cup water
  • 2 cups almond milk
  • 1 tsp vanilla
  • 1/2 cup peanut butter

Instructions 

  • Combine dry ingredients (flour, sugar, baking powder & soda, salt) into a large bowl and set aside.
  • In a microwave safe dish, melt coconut oil; set aside.
  • Mash banana in the bottom of a large bowl (I used a fork to do this), then add the water, milk and vanilla; stir to combine.
  • Stir in the coconut oil and peanut butter with the wet ingredients, then combine the wet and dry ingredients.
  • Preheat your waffle maker and spray it with nonstick spray if necessary.
  • Once waffle maker is hot, scoop a heaping 1/2 cup of batter into the waffle maker and cook until the "ready" light comes on. Use a spatula or tongs to remove waffle from waffle maker. Repeat this process until the batter is gone.
  • Enjoy!

Notes

*If the batter still seems too thick (it shouldn't!), add 1-2 tbsp water.

    Haha sometimes I wish I could snap my fingers and have any kitchen appliance right in my apartment. Because I want to use everything I read about but I know I’ll use it once and then put it away for ten years haha. But these look to die for! No wonder you had them again for dessert — I’m imaging a long day at work and then plopping on the couch with a big plate of waffles like this and watching the Bachelor. So that’ll be what I’m doing, minus the waffles! I’ll be dreaming of them though 🙂 I love that you used almond milk too!

Well, minus the peanut butter, anyways 😛 And you’re making me want to bust out my waffle maker… which has been buried in my pantry for way too long.

    Omg I love these!! They look so fluffy yet thick! One question though, how do you get them to not stick?? I’ve sprayed mine with Pam, oiled mine down with olive oil, and it still sticks every time! Maybe I just need a new waffle maker?

      I just used non stick spray…. They still stuck a little but I just used tongs and they came off pretty easily.
