This Honeydew Smoothie Bowl combines honeydew, kale, oats, and coconut milk into one healthy, creamy smoothie bowl!
OMGSHHHH Monday—I love ya, but I’m not sure if I was quite ready for ya. Jk, I love Mondays ….almost as much as I love smoothie bowls. That is to say me and everyone else on the planet.
Trendy foods as of late: avocado, avocado toast, almond butter, hemp seeds, chia seeds, kale, veggie noodles, sprouted grains, collard greens (apparently), and smoothie bowls. So, I guess I’m just trying to be trendy. BUT, there’s a reason all of these foods are trendy, right? Um….because they’re healthy and delicious. Clearly.
As for honeydew…. I don’t really know if it’s trendy. What I do know is that it’s everywhere, and by “everywhere” I mean in every single fruit salad ever. This used to annoy me because I used to dislike honeydew, but thanks to this bloggy blog, I’ve gotten to try and retry several foods that I now know I like, including honeydew.
As a complete side note: I had a really great weekend! I like trying to squeeze mini weekend recaps in my recipe posts, so I hope that’s ok with you. Oh and speaking of weekend, did you happen to catch my Yogurt Stuffed Roasted Apricots from yesterday? If not, you’re gonna wanna check ‘em out.
As for the weekend, it rained most of the day Saturday, which allowed Miguel and I to dive into some wedding planning! To be honest, we’ve kind of been putting planning off because, up until now, our wedding had been a long way’s away. But we’re approaching the one year mark (July 2, to be exact), so it’s now time to lock down more details.
I mentioned awhile ago that we changed venues which in turn also made us change caterers. We have a food tasting scheduled for July 9, so hopefully we can solidify those details and then I can do a mini write up of what the heck is going on! Saturday night at the Jam was a lot of fun and I may have had too much to drink which led to a lazy Sunday spent in bed researching honeymoon possibilities. I was a little mad because I had planned for a productive day, but then I convinced myself that looking up destinations IS being productive. So yeah… it was an unintentional wedding planning weekend and it was a lot of fun.
One thing I learned very quickly about honeydew is that it pairs really well with coconut, which is awesome because I’m borderline obsessed with coconut. Coconut milk, oil, cream, and flakes—they’re all so delicious.
If you haven’t hopped on the smoothie bowl train yet, I highly suggest you do so. There’s a reason why they’re so trendy! Not only do you get to customize your smoothie, but you get to customize the toppings too! What’s not to love? Plus they’re just so darn colorful and pretty looking. Honeydew Smoothie Bowl
- Prep Time: 10 mins
- Total Time: 10 mins
- Yield: 1
- 1/2 of 1 honeydew
- 2 tbsp shredded coconut
- 2 tbsp hemp seeds
- 2 cups kale, stems removed
- 1/4 cup old fashioned oats
- 1/4 cup coconut milk
- Combine ingredients in a blender and pulse until smooth.
- Transfer to a bowl and add your choice of toppings (I used 2 tbsp chia seeds, 5 strawberries and 1/4 cup shredded coconut).
Q: Have you hopped on the smoothie bowl train? Any honeymoon destination recommendations? We JUST started looking, but we are thinking somewhere outside of the U.S. for sure.
