You reeeeeeally can’t go wrong with tacos, especially when they’ve marinated in the slow cooker (errrr….Crock Pot) for 4 hours. These honey ginger pork tacos are marinated with—wait for it wait for it—honey and ginger (whoa), along with garlic and a bit of soy sauce. …THEN…then they’re topped with pineapple and COCONUT. The shredded coconut was a last minute decision but a good one at that. It helps to add to the sweetness of the pineapple and honey. Gah, I wish I was eating one of these bad boys while typing this. I mean seriously, tacos on a Monday sound good to me right about now.
Oh and PS I decided I’m obsessed with my Crock Pot. I already knew I was, but I think I’m going to use it a tad more frequently, no matter the time of year. This shouldn’t be a big deal considering I usually only remember to use it about 3-4 times a year. Not this year though! Nope, 2016 is the year of the Crock Pot.
Alright I’m done. Make these tacos because they’re crazy simple and delicious. The honey makes ’em sweet, the pineapple salsa makes ’em sweet and the fact that they’re a simple, no fuss meal makes them SUPER SWEET.
- 2 lb. pork*
- 4 garlic cloves, minced
- ¼ cup soy sauce
- 4 tsp fresh ginger, grated
- ¾ cup honey
- Salt to taste
- 8 soft taco shells
- Pineapple salsa:
- 1 cup pineapple, diced into small pieces
- 2 tbsp red onion, diced
- 1-2 tsp shredded coconut
- Juice from ½ lime
- Pinch of cilantro
- Grease slow cooker with a bit of olive oil and then place the pork in the bottom of it.
- Toss garlic, soy sauce, ginger, and honey in slow cooker and cook pork on high for 3-4 hours, or until pork is tender.
- Right before you take the pork out, prep the salsa. Do so by combining everything in a small bowl.
- Next, heat tortillas in skillet for a few minutes on each side or until they're slightly browned and warm.
- Put pork in taco shells, top each one with a spoonful of pineapple salsa, and enjoy!
