Grease slow cooker with a bit of olive oil and then place the pork in the bottom of it.
Toss garlic, soy sauce, ginger, and honey in slow cooker and cook pork on high for 3-4 hours, or until pork is tender.
Right before you take the pork out, prep the salsa. Do so by combining everything in a small bowl.
Next, heat tortillas in skillet for a few minutes on each side or until they're slightly browned and warm.
Put pork in taco shells, top each one with a spoonful of pineapple salsa, and enjoy!
Notes
*I used Trader Joe's boneless pork loin chops, which are fairly small in size. Two pounds yielded 8 full tacos. If you use larger meat, you may end up with more tacos (but hey, there's nothing wrong with that!)
