You’re the person who cannot survive a day without almond butter, the one who has to have at LEAST 3 different brands and varieties at all times, the one who thinks smoothies are inevitably better with a drizzle of it overtop, the person who loves almond butter toast almost as much as avocado toast, the one who eats it by the spoonful and, as of now, you’re the person who is obsessed with almond butter chia pudding.
You know who you are.
Now that we got THAT out of the way, let’s chat about the weekend real quick. What did you do? Stay in? Go out? Set up a play date with your dog and your friends friends dog and watch them slobber on each other? No? Just me? Cool. It was actually sort of adorable (I Instagrammed a picture here) but also sort of gross, as you probably could have guessed. That was probably the highlight (looooool wish I was kidding), but other fun activities included Miguel and I spontaneously going out for a few drinks Friday night, taking a barre class Saturday morning with my friend, and hanging out with my brother Saturday night.
So yeah, pretty good balance of fun and productive, aka the BEST kind of weekends.
But you know we have to talk about the obvious here right? This almond butter chia pudding that IS mine and your new favorite breakfast. If you have yet to try chia pudding, what are you waiting for? I’m actually really weird about food textures, and I kind of love the texture of chia pudding. Just LOOK AT IT..
Ugh, yeah. This recipe requires 5 ingredients and is one of those throw everything into a bowl, stir and wait kinda recipes. ….pretty much like overnight oats but with more fiber and protein. Woo! And what better way to make it extra almond-y than with Blue Diamond Almond Breeze Almondmilk? Almond butter and almond milk always go hand in hand, in my opinion.
I opted to top mine with almonds, peanuts, banana and extra almond butter, but chocolate chips would also be an excellent option if chocolate for breakfast is your thing. Regardless of what you top it with, you need—yes, NEED—to make this almond butter chia pudding if you’re an almond butter lover. ..which I know you are because we already talked about it 😉

- 3 tbsp almond butter (or more to taste)
- 1 tbsp maple syrup
- ¼ tsp vanilla extract
- 1 cup Almond Breeze Almondmilk
- ¼ cup+1 tbsp chia seeds
- Place almond butter, syrup, vanilla and milk in a bowl and stir together.*
- Stir in chia seeds by hand.
- Once everything is mixed, pour mixture into a bowl or mason jar and place in the refrigerator for at least 3 hours, or overnight.
- Top with extra almond butter and anything else you'd like and enjoy!
