Leftover Thanksgiving Egg Scramble

  • 8 eggs
  • 1 tbsp olive oil
  • 1 sweet potato sliced
  • 1/2 cup green beans
  • 1/4 cup corn
  • 1 cup turkey sliced/chopped
  • Salt pepper and red pepper flakes to taste


  • Heat oil in large skillet and scramble eggs accordingly.
  • Heat up leftover sweet potato, beans, corn, and turkey either in the microwave or over the stovetop.
  • Combine vegetables and turkey with eggs, top with salt, pepper and red pepper, and enjoy!


*Feel free to add more or less potatoes/beans/corn/turkey depending on the amount of leftovers you have.
