Need a quick snack? Pizza Toast is the best because it’s ready in 5 minutes and it’s like your own personal sized “pizza”. Choose your favorite toppings, then place it under the broiler for a couple minutes and you have yourself a delicious make shift pizza.

Please tell me you’ve tried pizza toast before?! It’s honestly the greatest snack and a wonderful option for those times when you’re craving pizza, but don’t necessarily want or need an entire pizza. As much as I love traditional pizza (especially my vegan pizza and Whole30 pizza), this recipe is probably the one I make most frequently.

  • The toppings are easy to customize so you can make your ideal pizza on a piece of toast

Ingredient notes:

Bread: I tested this recipe with both whole wheat bread and gluten free bread, and both turned out wonderfully. My suggestion would be to just use your favorite bread, though make sure the slices aren’t too big because we want the cheese to mostly cover the bread.

Cheese: If you can find sliced mozzarella cheese, that’s what you should use. However, I recently went to the store and couldn’t find any, so I subbed sliced havarti cheese instead and it worked out really well. I think munster cheese would also be delicious.

Toppings: This is the fun part because you can use whatever toppings you choose. After all, that is the beauty of homemade pizza. With that said, keep in mind that, though you can use any toppings, you’re a bit limited in terms of space since you’re just using a slice of bread, so choose wisely. I opted to use pepperoni, grape tomatoes and fresh basil, which worked out wonderfully.

Step-by-step instructions

Step 1: Preheat your broiler. Then, place the bread on a baking sheet. I used a smaller baking sheet so I could only fit 4 slices, but feel free to add however many slices of bread you want.

Step 2: Top each slice with 2 tablespoons of your favorite marinara or pizza sauce.

Step 3: Add a slice of cheese on top of each piece of bread, pressing it down into the sauce.

Step 4: Add your favorite toppings! In this case, I used pepperoni and sliced grape tomatoes. Then, drizzle a small amount of oil over top of each piece, which helps the tomatoes to roast more quickly.

Step 5: Broil the “pizza” for 2-3 minutes, or until the cheese has melted. Top the pizza with any additional toppings, like fresh basil and/or red pepper flakes.

FAQs

Should I toast the bread beforehand?

It’s not necessary because the bread will toast in the broiler. But if you want it to be crispier, then use I recommend lightly toasting the bread beforehand in your toaster.

Do I have to drizzle oil over top? What kind of oil should I use?

You don’t have to, but I think the oil helps the tomatoes to roast more quickly, which is ultimately what we want to happen. I always opt for olive oil or avocado oil because they have the more neutral flavor. Be sure to use a small amount–no more than 1/4 tsp per slice of bread.

What do I do if my broiler is broken?

Have no fear! My first recommendation would be to use a toaster oven instead. If you don’t own a toaster oven, place the rack of your conventional oven at the very top, then preheat it to 500°. Place the baking sheet on the highest rack and toast the pizza for 5-6 minutes. This will cause the cheese to melt and the tomatoes to get soft, though you won’t get the golden brown coloring on top like you would from the broiler.

Can I make this recipe ahead of time?

I wouldn’t. This recipe takes only 5 minutes to make, and it tastes best fresh. So, think of it more as a quick lunch or snack rather than something to prep ahead of time.

Ingredients 

  • 4 slices bread
  • 8 tbsp marinara sauce
  • 4 slices mozzarella cheese, or sub munster
  • 16 pieces pepperoni
  • 10 grape tomatoes, sliced
  • 1 fresh basil leaf, chopped
  • 1 tsp olive oil, for drizzling

Instructions 

  • Preheat broiler on high.
  • Place bread on a baking sheet, then top each piece with 2 tbsp of your favorite marinara sauce. Add 1 slice of cheese on top, lightly pressing it into the sauce.
  • Then, add your favorite toppings, like pepperoni and grape tomatoes. Drizzle each piece of bread with 1/4 tsp oil, then place the baking sheet in the oven and broil the pizzas for 2-3 minutes, or until the cheese is melted and slightly golden on top.
  • Add the fresh basil on top, along with any additional toppings you may want (like red pepper flakes). Enjoy!

Notes

*If you can't find sliced mozzarella cheese, use havarti or munster instead. 
-Serving size is 2 pieces/person
-You don't have to toast the bread beforehand, but if you want it to be crispier, then you should lightly toast it in the toaster before placing it on the baking sheet and assembling the pizzas. 
-The toppings are easy to customize! Other delicious toppings could be: mushrooms, bell pepper, cooked sausage, olives, spinach, etc. 
-If your broiler is broken, try making this in a toaster oven. Or, place a rack in your conventional oven on the top shelf, preheat the oven to 500°, and make the pizza that way. The cheese will melt within 5-6 minutes, but it won't get golden on top (it'll still taste good though!)

    Oh man… I can’t even tell you how many fond memories I have of cold pizza for breakfast. And of 1AM McDonald’s drive through runs 😆 I actually prefer ALL of my food cold or at room temperature, and people give me the craziest look when I wait for my food to cool before eating it.
