WHAT? It’s Friday and last Friday I announced that I was going to be starting a Friday Finds series. Yeah…. Let’s just say the rain ruined my plans. I don’t know about you, but it has rained every.single.day this week and it’s currently raining now so… here’s to next Friday?! 

Instead I have a smoothie recipe for ya, so I hope that’s ok. When I go to make a smoothie, I have several foods that I consider to be my smoothie staples, i.e. banana, strawberries, oats, dairy free yogurt, honey, spinach, peanut butter/almond butter, almond milk…. the list goes on. This smoothie has none of those because for once I wanted to expand my smoothie horizons, which I hadn’t done in a long time. ….possibly because I happened to have pineapple and a very ripe avocado on hand, but that’s beside the point.

Before we continue smoothie talk, do you have any exciting plans for the weekend? I’m finishing off OITNB tonight (it’s taken me MUCH longer than I care to admit), teaching two classes tomorrow morning per the usual, followed by an evening spendtat Jam on Walnut which I wrote about last year. Essentially, a few of the streets in Shadyside close down and there’s live music and lots of beer and it’s typically an all around good time. Crazy packed, but still fun. I’m just hoping it doesn’t rain….. Even if so, I am going with some of the other barre instructors, so I’m sure we will think of a different plan if rain ruins our current one. 

And then there’s Sunday my favorite/second favorite day of the week. I have no plans, which means buying iced coffee, going to the grocery store, recipe development and taking Layla to the park. Seriously though, Sundays=love. Kinda like this smoothie…

So I guess you saw the “for two” part in this blog post title. You can whip this up and give the second smoothie to your bf/gf/bestie/mom/dad/sibling/cousin, or you can keep it for yourself, because sometimes sharing isn’t the best option. Sometimes you just need two pineapple smoothies—one for breakfast and one as an afternoon snack. It makes sense, and I totally support that idea.

Besides pineapple, this smoothie boasts mango and lemon flavor, with added fiber thanks to the chia seeds and some creaminess thanks to the avocado. I’ve tried the whole avocado-in-your-smoothie thing before and sadly have been able to taste it. As much as I love avocado (a lot), I don’t want to drink it in smoothie form. I pinky promise you can’t taste it in this smoothie. All the sweet fruity goodness overpowers the avocado, but you’re still using up any ripe avocados while getting in a dose of healthy fats. 

Now really, is there anything better? Fridays. But other than that, right now in this moment, nothing.

Ingredients

  • 2 cups pineapple
  • 1 mango
  • 1 ripe avocado
  • Juice from 1 lemon
  • 1 tbsp chia seeds
  • 1/4 cup coconut milk

Instructions

  • Place ingredients into blender and blend until smoothie.
  • Enjoy!
