This Pineapple Ginger Punch is super refreshing and made with just a few ingredients, including fresh pineapple and ginger beer.Â
It’s July 4th!!! No wait, it’s not, but it feels like it is so let’s roll with it. Besides fireworks, you NEED a drink to celebrate the holiday. You just do, and this pineapple ginger punch couldn’t be simpler.Â
Ok but really, what are your plans for tomorrow? Hanging out with family? Friends? Going to the pool? Watching fireworks I hope?! I honestly have no clue what Miguel and I are doing during the day, but we’ll be attending the Pittsburgh Riverhounds game for what I believe is the third year in a row on the 4th. The view of the city from the stadium is awesome, and afterward you can stay in your seats or go down on the field and watch the fireworks. Pretty convenient if you ask me.Â
Beforehand though? Well, we’ll probably have a drink of two, and I can think of nothing better than this pineapple ginger punch.Â
It’s made with fresh pineapple, ginger beer and…. tequila! Or vodka. Or gin! Honestly, you can use any of those alcohols and this will be delightful. It’s fresh, it’s summery, it’s strong—perfect for the 4th, that’s for sure.Â
I originally made and shot this recipe about a month ago, but I just remade it a few days ago before and didn’t have fresh pineapple, so I used frozen and blended everything up in my blender. SO GOOD! It was basically a frozen margarita without the ice chunks and brain freeze.Â
However you’re celebrating, hopefully you take the day off from work and relax, preferably with a pineapple ginger punch in hand.Â
Pineapple Ginger Punch
Ingredients
- 1 cup fresh pineapple
- 3 tablespoon ginger beer
- 2 oz. tequila
- 1 sprig rosemary
- Club soda
Instructions
- Blend the pineapple up in a blender; it should blend on its own without any additional liquid, but feel free to add 1-2 tablespoon water to get it going.
- Pour pineapple juice into a cocktail shaker, then add ginger beer, tequila, rosemary, and top it off with club soda until the shaker is close to full.
- Shake, pour and enjoy!
