Making your own pizza has never been simpler or tastier! This Kale Pesto Pizza uses minimal ingredients and is topped with sliced tomatoes and burrata cheese and fresh basil.
PIZZAAAAAA. Oh pizza, I will never tire of you. This is only my second pizza recipe on TAE EVER. <—whyyyyyyy.
Ok here’s the truth. Miguel and I had ‘Pizza Fridays’ for an entire year (ok maybe two years) where we would either order pizza (not the worst option) or eat a store bought pizza (THE ACTUAL WORST OPTION) every single Friday night. I’m not opposed to ordering pizza, but the store bought pizzas would make me feel bloated, so essentially I spent an entire year being bloated on Friday nights. Perhaps they should have been called ‘Bloated Fridays’, instead of ‘Pizza Fridays’, I don’t know.
Typically, I’m pretty ‘eat what you want, when you want’, but if a certain type of food makes you feel terrible, you should probably avoid it (also why I avoid dairy milk).
What I’m attempting to say is that a few months ago we stopped buying store bought pizza and between him traveling for work and the wedding and the honeymoon, we haven’t had Pizza Friday in awhile. I’m thinking that needs to change, but this time with the option of ordering pizza or making my own.

As another side note: I’m sure some store bought pizzas are fine—I don’t usually buy the “healthy” kind because they’re so small and expensive. Not worth it, in my humble opinion.
Ok wow I never realized how passionately I felt about store bought pizzas until now. Sorry ‘bout that. Let’s talk about this HOMEMADE kale pesto pizza, mmmmk?
I used store bought dough from Whole Foods because pizza nights are meant to be simple. So, store bought crust with my homemade kale pesto, topped with tomatoes and burrata cheese OH MY. If you can’t find burrata you can use fresh mozzarella, but burrata is extra creamy and delicious. This recipe should come together in around 30 minutes, maybe 35 depending on your oven. That’s about how long it takes for pizza to arrive on your doorstep when you order it, so you might as well make your own every once in awhile. I mean, that’s what I’m going to do.

Tip: Though the video shows me adding the burrata cheese and then placing it in the oven, you should actually wait to add the cheese. This way, the crust can cook first before the cheese becomes too melted and/or burns. Read the recipe directions for additional details!
- Kale Pesto:
- 2 garlic cloves
- 6 tbsp pine nuts
- 2 cups fresh basil
- 2 tsp dried basil
- ¼ cup olive oil
- ¼ cup water
- 1 cup kale, stems removed
- 2 tbsp olive oil
- Kale pesto
- 1 ball store bought pizza dough
- 1 cup grape tomatoes, sliced
- 2 balls burrata cheese
- Salt and pepper to taste
- Fresh basil for garnish
- Preheat oven to 400°.
- Combine the kale pesto ingredients in a blender and pulse for at least 30 seconds or until everything is mixed together*; set aside.
- Sprinkle a cutting board or baking mat with flour and then use your hands and/or a rolling pin to roll the pizza dough out.
- Brush oil on the dough and then the kale pesto overtop of that.
- Top the pesto with tomatoes, salt, and pepper and transfer the pizza onto a baking sheet.
- Bake the pizza for 20 minutes and then add the burrata cheese. Cook the pizza for an additional 5-7 minutes or until crust is golden brown and cheese has melted.
- Remove from oven, cut and enjoy!
