These delicious Almond Butter Chocolate Chip Cookies are not only flourless, but they’re also paleo-friendly and only five ingredients!
HI hi hi—how was everyone’s weekend? I’m going to chat about my weekend while showing you photos of almond butter cookies, so hopefully that’s alright!
Friday I went to yoga per the usual and it wasn’t quite as packed as it has been the past few weeks. I’m pretty certain there were close to 60 people in class every Friday in January. Talk about hot n’ sweaty yoga! This past Friday was packed but not quite as packed which was nice. After yoga I came home and Miguel and I watched the first episode of Fresh Off the Boat. Did any of you watch it? It premiered last week I believe, and I thought it was pretty funny. It’s a little hard to judge a show by the first episode, so I think we’ll keep watching for now.
Saturday morning started off at the gym with Miguel and Justin. I completed a leg strengthening sequence of randomness (aka lots of squats and lunges) followed by a mini cardio series I posted on Instagram. After the gym I came home and made these almond butter chocolate chip cookies while Miguel took Layla to the park. I then proceeded to eat these cookies for lunch. Not all of them but….maybe half? 😀 NOT MAD. I typically eat pretty normal lunches (salads, sandwiches, soups…), but on days when I happen to be recipe testing, my lunches can get pretty interesting. In this case, interesting means delicious.
After downing several cookies, Miguel came home and we went on a walk around Squirrel Hill, a nearby Pittsburgh neighborhood. Nothing major, but it’s nice to explore a part of the city we aren’t so used to sometimes. Saturday night we met up with Miguel’s two friends for dinner and drinks and that was that! Last but not least, I went to yoga with my friend Richelle Sunday morning in downtown Pittsburgh and watched the Grammy’s last night. But back to these cookies…
These cookies are only FIVE ingredients and incredibly easy to make. Almond butter, honey, an egg, baking soda, and chocolate chips are all you need before you’ve got yourself 1) delicious 2) protein-packed 3) super flavorful cookies. Not too bad if you ask me.
- 1 cup almond butter
- 2 tbsp honey
- 1 egg
- 1 tsp baking soda
- ¼ cup+2 tbsp chocolate chips
- Preheat oven to 350°.
- Whisk eggs together in a large bowl.
- Add the almond butter, honey and baking soda and mix together with an electric mixer.
- Next, stir in the chocolate chips by hand.
- Using a spoon, scoop the dough out and place it onto a baking sheet.
- Bake for 12-15 minutes.
