This Stone Fruit Ceviche puts a summer twist on the traditional recipe by featuring peaches, plums and nectarines, along with the regular “stuff” like shrimp and lime juice.
Do you remember the first time you tried ceviche? I do. It was ironically enough at a Pittsburgh restaurant called Seviche (yes, with an “S”). It was for Miguel’s 22nd birthday aka quite a long time ago. I remember him telling me that he liked salsa—salsa music, salsa dancing and any kind of food including salsa—and when I googled “salsa dancing Pittsburgh”, Seviche came up.
We went, we ate tapas, we drank sangria, and we danced—it was incredibly casual and zero percent intimidating, thankfully—so even though I had no clue what I was doing, I just sort of went with it. And THAT is what I think of every time I eat ceviche. Oh, and the fact that it was love at first bite. I mean, shrimp, onions, tomatoes, lime juice… c’mon, what’s not to love?
This stone fruit ceviche is a summery take on the traditional recipe, which I figure is perfect timing considering there’s stone fruit all over the grocery stores and farmer’s markets these days. Bring on the stone fruit AND the ceviche!
If you’ve never tried ceviche because ohhh I don’t know, maybe tomatoes aren’t your thing (mom, I’m looking at you), then THIS is the version for you. Also, can we talk about how Miguel “hates” onions but absolutely loves ceviche… I don’t get it. Anyway, this stone fruit ceviche includes shrimp (duh), nectarines, peaches, plums, onion, cilantro, lime juice, and avocado. I didn’t include anything spicy because I was going for more of a sweetish ceviche, but if you want that added kick feel free to add a jalapeño pepper!
I love ceviche for a lot of reasons, one of them being that it’s the easiest appetizer to bring to a friend or family gathering. It takes minimal time to prep, zero baking and is actually on the lighter side as far as appetizers go. If you have any stone fruit on hand, then you MUST make this stone fruit ceviche, even if just to have on the side with dinner. Enjoy!Print
Stone Fruit Ceviche
- Prep Time: 10 mins
- Total Time: 10 mins
- Yield: 2-4
- 1/2 lb. medium shrimp, cut into bite-size pieces
- 2 nectarines, diced
- 2 peaches, diced
- 2 plums, diced
- 1/4 cup red onion, diced
- 1 avocado, sliced or diced
- 2 tbsp cilantro
- Juice from 3 limes
- Salt and pepper to taste
- Optional: 1 jalapeño
- Place diced shrimp into a bowl; add the rest of the ingredients except for the lime juice, salt and pepper and stir to combine.
- Last, add the lime juice, salt and pepper and stir until everything is coated.
- Serve with your favorite tortilla or plantain chips.
