Start your morning the healthy way with this Nectarine Ginger Smoothie Bowl. Ginger adds a flavor kick to the sweet nectarines and plums—add chia seeds and you’re good to go!

Never have I ever met someone who didn’t enjoy a good smoothie bowl. …not including those who haven’t hopped on the smoothie bowl train which, if you’re one of those people, GET WITH TIMES. I’m kidding, I’m the worst at food trends. ..except when it comes to smoothie bowls and ESPECIALLY when that smoothie bowl has ginger in it.
Ugh, ginger. Be still my heart.
You know when someone tells you they don’t like a food and you literally gasp out loud out of disbelief? YOU DON’T LIKE CHOCOLATE?!! *gasp* what is wrong with you?! Yeah, that’s how I feel when someone tells me they don’t like ginger. But….how??? It’s so darn good and good for you, too.


But nectarines…poor nectarines. I feel like they always take a backseat to peaches and, while I admit to peaches are a bit more flavorful, I think nectarines pair really well with certain foods, i.e. plums and apricots. I feel like since peaches DO have a stronger flavor (they do right? Or am I making that up? I feel like they do….), they kind of steal the show, whereas nectarines are more than happy to share the attention. In this case, they’re (they’re=nectarines) sharing the spotlight with ginger. Nectarines+ginger is a winning combo!
I can’t recall the first time I tried a smoothie bowl, and if I’m being totally honest, I typically drink smoothies on-the-go rather than eating them with a spoon. BUT, when I DO eat smoothie bowls my belly is a happy camper. For one, they’re super filling—you’re basically eating a smoothie with a ton of extra toppings on top. And secondly, when I’m enjoying a smoothie bowl it means I’m not running out the door grabbing breakfast, which some days is my sad reality.

Tip: Use very little liquid! You want the smoothie to be thick enough to eat with a spoon, so I recommend using 1-2 tablespoons of liquid—that’s it! Nectarines are already pretty liquid-y, so you really don’t need a lot. Plus, it’s better to start with a small amount and then add more rather than adding too much from the start and then having a super liquid-y smoothie.
Tip: While you can grate the ginger into your smoothie, you don’t have to. I simply cut a small piece of ginger off, threw it into the blender and it blended up perfectly fine.

Nectarine Ginger Smoothie Bowl

Ingredients
- 3 nectarines, pits removed
- 1 plum, seed removed
- 1 tsp ginger*
- 1 tbsp chia seeds
- 2 tbsp yogurt, dairy free for vegan option
- 1-2 tbsp almond milk, or milk of choice
- Optional: 1-2 tbsp honey or maple syrup
Instructions
- Place ingredients in blender and blend until smooth. Start by adding 1 tablespoon of liquid and then add more, 1 tablespoon at a time, until smoothie is blended but stick thick.
- Pour into a bowl, top with your choice of toppings and enjoy!

I so admire your photography – you take such gorgeous pictures! I usually pick nectarines over peaches, though I definitely like both. I know my dad was always more likely to buy nectarines when I was growing up, so I guess I follow suit. And there’s nothing like fresh ginger. It’s so refreshing!

I don’t get how people don’t like ginger either. It’s magical. And I kind of like nectarines better than peaches. The skin is more pleasant to chew, lol. This smoothie bowl needs to find it’s way to my face NOW!

I feel like I like nectarines way more than peaches! I may just be getting bad peaches, but I mostly find them pretty flavourless and mushy. Nectarines seem to be better around these parts. And ginger is always a winner! Love the idea of pairing it with nectarines <3
I think it’s way easier to stumble upon a “good” nectarine than a good peach. Buuuuut with that said, I don’t understand why nectarines don’t get much love (or maybe they do and I just don’t realize it?). Thanks Amanda!
