Thirty minute Cajun Chickpea Burgers that stay together thanks to breadcrumbs and a flax egg! Flavored with onions, peppers and cajun seasoning, these burgers are both spicy and flavorful.

I don’t know, that’s just the first thing that popped into my head. What I do know is that it’s Friday and I just put Chapstick on and gave Layla a kiss and now I have dog hair on my lips. Cute.
What I also know is that everyone needs a good veggie burger recipe to fall back on. It’s a fact. It’s also a fact that you should always (ALWAYS) have chickpeas on hand, mostly for when crunchy roasted chickpeas cravings occur, but also for when you need a good veggie burger in your life.
The worst part about veggie burgers is that they sometimes fall apart, but not these chickpea burgers. Nope nope nope. I made ‘em twice and both times they stuck together like GLUE, which is a good thing. Have you ever had a veggie burger fall apart mid flip? It’s the worst and honestly the saddest thing because then you have to eat your burger with a fork. Haaaaa ok so it’s not that big of a deal, but let’s pretend it is.
Can we also discuss chipotle mayo? Is that what it’s called when you combine sriracha and mayonnaise?? I want to say yes but I also can’t remember. Regardless, this burger is made of chickpeas, onion, garlic, peppers, and of course cajun seasoning, and then topped with chipotle mayo and avocado. <—is there any other burger topping? Nope. Actually, what is your favorite burger topping? Whether it’s meat burger or veggie burger, I gotta say mine is avocado (obvious first choice) and thennnnn either cheese or red onions come second. I used to dislike anything on my burgers (plain burger, please!) but not anymore. I’ve said it before, but my tastebuds have matured and I now enjoy all the toppings on pretty much anything.
Tip: I ended up using 1/4 cup breadcrumbs and 1/4 cup whole wheat flour to help with the binding because I ran out of breadcrumbs, and it worked! So, if you’re low on breadcrumbs, feel free to do the same thing. Of course flour doesn’t have flavor the way breadcrumbs do, but the cajun seasoning helps to add flavor anyway. If you are fully stocked on breadcrumbs though, use the entire 1/2 cup of them.

Cajun Chickpea Burgers
- Prep Time: 15 mins
- Cook Time: 15 mins
- Total Time: 30 mins
- Yield: 8
- 2 cans chickpeas
- 1 green pepper, seeds removed
- 2 garlic cloves
- 2 tbsp yellow onion
- 2 tsp cajun seasoning
- Handful of cilantro
- 1 flax egg (1 tbsp flaxseed meal + 2 1/2 tbsp water, stirred)
- 1/2 cup breadcrumbs*
- Juice from 1 lime
- Create flax egg: place flaxseed meal into a a bowl and then add water; stir and let sit for approximately 5 minutes.
- Put chickpeas, pepper, garlic, onion cajun seasoning, and cilantro into the food processor and pulse until everything is mixed together. Pour mixture into a large bowl.
- Stir in flax egg, breadcrumbs and lime juice by hand, adding more breadcrumbs and/or a bit of flour (I’ve used whole wheat) 1 tbsp at a time until mixture is no longer sticky.
- Scoop out 1/4-1/3 cup and your hands to form mixture into patties.
- Heat a large skillet with a bit of olive oil and then place the burgers into the skillet and cook on medium-high heat for 3-4 minutes on each side.
- Top with your favorite burgers toppings and enjoy!
*If you’re low on breadcrumbs, you can use flour. The second time I made these I ended up using 1/4 cup breadcrumbs and 1/4 cup flour and they worked out fine.
**The burgers should hold together pretty well. However, if you’re fearful that they may fall apart in the skillet, place them in the refrigerator for 20-30 minutes beforehamnd to assure everything holds together. I didn’t refrigerate mine and they held together wonderfully, but it’s always an option.
