This creamy, cheesy Mushroom & White Truffle Mac and Cheese can be made in one skillet and in under 30 minutes. It combines truffle oil, mushrooms and parmesan cheese for a super tasty variation on traditional macaroni and cheese.
THIS MAC AND CHEESE. Mmmmmm no—let’s back it up. TRUFFLE OIL, oh how I adore thee. I’ve always loved truffle oil but to be honest, it’s not a condiment (condiment? or just oil?) I keep on hand at all times. It’s good, but it only mixes well with so many foods.
But first, my weekend. Boy oh boy what a weekend it was. You too? Did you finish your holiday shopping? Did you attend any holiday-themed parties?
I spent Friday night with Miguel and two of his friends and, what was supposed to be a chill night out turned into me mixing beer and liquor the entire night which then led to an eight hour hangover the next day which immediately brought on memories of my freshman year of college. Not that I don’t ever get hungover anymore, but eight hours is a little too intense for my liking. Anyway, once noon passed and my head was still throbbing I sort of threw in the towel for the day and decided to park my ass on the couch. Once I napped it off, my night turned out quite alright. ….and by ‘quite alright’ I mean my night was spent with sushi+Anthony Bourdain: Parts Unknown+The Office reruns.
What else was I supposed to do?
Yesterday I made up for lost time by being uuuuuber productive in the morning. ….aaaand by ‘uber productive’ I mean I cleaned out my refrigerator+went grocery shopping+created two recipes+washed mass amounts of dishes. Afterward, Miguel, Layla and I headed to my aunt’s house to celebrate (<<<almost spelled that ‘selebrate’…help) my grammy’s 86th birthday! If you met her, you’d have zero idea she just turned 86, mostly because she looks and acts like she’s 70 still. I’m always so impressed.
The one thing I didn’t do this weekend that I wish I would have? Eaten an entire bowl of this truffle mac and cheese. Why? Because I made this recipe over a week ago, and if you think it lasted more than a day in my house then you’d be kidding yourself. I gave a small container to my mom and I myself proceeded to down the rest throughout the course of the day. Impressive or disgusting? I’m not sure. Maybe both?
This recipe was inspired by my skillet mac n’ cheese with sun-dried tomatoes. It’s essentially the same recipe except I made the portion slightly bigger and traded the sun-dried tomatoes for mushrooms. Hey, if it ain’t broken don’t fix it, right? Oh, and if you’re hesitant about buying truffle oil because of the price (it’s definitely one of the more expensive oils), just know that a little bit goes a LONG way. This dish only requires 2 teaspoons of oil, so the entire bottle should last you awhile.

Mushroom & White Truffle Mac and Cheese
- Prep Time: 5 mins
- Cook Time: 20 mins
- Total Time: 25 mins
- Yield: 4
- 2 tbsp olive oil
- 1 cup sliced baby bella mushrooms
- 1 tsp fresh thyme
- 3 cups pasta*
- 2 cups water
- 1 cup unsweetened almond milk
- 2-3 tbsp flour**
- 2 tsp white truffle oil, more to taste
- 2 cups shredded parmesan cheese, more to taste
- Salt and pepper to taste
- Heat olive oil in a large skillet over medium-high heat; add mushrooms and thyme, stirring occasionally for 5 minutes or until mushrooms are just starting to cook.
- Add in pasta, water, and milk and turn heat up to high; bring to a boil and cook until noodles are soft.
- Turn heat down to medium and add in 2 tbsp of flour, stirring really well.
- Add in truffle oil and cheese, stirring. If mixture still isn’t thick enough, add in 1 more tbsp of flour.
- Add salt and pepper to taste and enjoy OR:
- Optional: turn broiler on high and place skillet (as long as it’s oven-safe) in oven and broil for 3-5 minutes or until cheese turns slightly golden in color.
