Seriously, the only appropriate excuse for not liking almond butter is that you’re allergic to almonds. If that’s the case, I get it and I am sorry.
Onto the weekend! I’ve been skipping my “Life Last Week” posts because I’ve been posting recipes for American Eagle lately, which is beyond cool, but I miss talking real life with you! So, let’s do that today. This past weekend my mom accompanied me to my wedding hair trial. The big debate for me was whether to wear my hair up or down and, well, you’ll just have to wait to see! Oh the suspense… Regardless, it was fun to get my hair done. Saturday night, Angela and I finally made it to Gaucho, which I had been wanting to try for awhile. Verdict: SO GOOD. The food was amazing and, despite the long wait, I’d definitely go back. To be honest, I didn’t do a whole lot yesterday other than tested a few recipes and prepped for the week ahead.
There was one thing that happened this past week that really stuck with me, and it was a random stranger providing dog advice. My question is, why do dog owners feel the need to provide “tips” on how I should be taking care of my dog? It’s one thing if you’re my friend and you’re just giving me an FYI, and it’s another thing if I asked for advice, but I get super irritated when dog owners who I don’t know tell me what dog collar Layla should be wearing or how I should hold the leash or the best kind of leash to get or how to get her to behave off leash or that she should really have a place to go to “release her energy” or how often I should cut her nails. While I’m pretty certain these people mean well, it comes off as very “I know everything and am a more adequate dog parent than you” and I’m not into it.
Has this ever happened to you? I feel like this same scenario probably happens with children too… WOOF, that’s all I gotta say.
Now, a quick summary of these almond butter protein bars.
They’re no bake, 8 ingredients, perfectly sweet, and filled with protein. YES. Pro tip: If you’re planning on making these as a grab-n-go snack, I’d recommend only adding a chocolate drizzle rather than an entire layer of chocolate because the chocolate tends to melt fairly quickly. With that said, if you’re leaving these babies at home, add the chocolate because…chocolate..and just store them in the refrigerator. BOOM, problem solved.
- 1 cup pitted dates
- 3 tbsp chia seeds
- 2 tbsp old fashioned oats
- 1 scoop vanilla protein powder
- ¼ cup maple syrup
- 1 cup almond butter
- Chocolate topping (optional):
- 1 cup chocolate chips
- ¼ cup coconut oil
- Place dates, chia seeds and oats in a food processor and pulse for 20-30 seconds; add in protein powder and syrup and pulse again until everything is combined.
- Last, add almond butter and pulse. Mixture should form a giant ball--this is a good thing!
- Line an 8x8 baking dish with coconut oil or wax paper and pour mixture into pan, using a spatula or your hands to press mixture down and smooth it out.
- For chocolate topping: combine chocolate chips and oil in a microwave safe dish and heat for 2:00, stopping every 30 seconds to stir. Likewise, you can also heat mixture over stovetop.
- Pour chocolate overtop of almond butter and tilt baking dish so the chocolate spreads evenly.
- Place bars in the refrigerator for 20 mins or so.
- Remove, cut them into bars and enjoy!
