Soooooo hilariously yet not that hilariously, I’ve actually already posted this farro chili recipe on my blog. It’s not the EXACT same recipe, but it’s 90% the same. Essentially I was brainstorming recipe ideas, thought up a farro chili recipe, created it, photographed it, and then randomly stumbled upon my original farro chili pin on Pinterest only to remind myself that the recipe already exists.
Like I said, hilarious yet not.
So I guess we can just pretend like I wanted to update the photos or something—the original ones are kind of awful so we’ll go with that.
Anywhooooo, back to the chili. Well no, let’s talk about the weekend first. Do you have plans? Lately I’ve just been going with the flow in regards to my weekends, but not this weekend. Noooooope. This weekend I have actual CONCRETE PLANS like a real person. How exciting. Is it sad that when I have plans, I get a little burst of anxiety because I worry about not getting any work done? Ohhhhh I know I know it’s sad and bad and pathetic all around, but I can’t help it. Luckily as I’m typing this I realize that I have all of Saturday afternoon free, so I should be golden. PHEW.
Another ‘story of my life’ is that every single winter I forget my slow cooker/Crock pot (<—what do you call it??) exists, which is exactly what happened this year. It’s the END of February and I’m only on my second slow cooker recipe of the season. Excellent timing. Well, it kind of IS good timing simply because it snowed here yesterday. Chilly weather=bring on all the warm soup and chili!
You may be wondering what the main differences are between this farro chili recipe and my original one, to which I’d say, excellent question. The MAIN differences are that I incorporated vegetable broth and made this version vegetarian, whereas that version uses chicken and no broth at all. …that’s pretty much it. The broth helps to make it a tad more soup-y, though I must admit I don’t love my chili to be the same consistency as soup. If you DO, feel free to add more broth to the recipe.
If you still haven’t experimented with farro, this is a great starting point. Farro is comparable to rice I’d say, though softer in texture. It’s REALLY filling, delicious when paired with vegetables and kidney beans and tomato sauce. Oh! Like this farro chili recipe. What a coincidence.

- 2 tbsp olive oil
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 2 cups farro
- 1 can ( 6 oz) tomato paste
- 2 cans diced tomatoes*
- 2 cans (32 oz total) kidney beans
- 2 cups vegetable broth
- ½ tsp oregano
- ½ tsp chili powder
- ¼ tsp salt
- Pinch cayenne pepper
- Place all ingredients in your slow cooker, making sure to put the olive oil in first so nothing sticks to your slow cooker.
- Heat on high for 3 hours.
- After 3 hours, stir everything together, taste and add additional seasoning if you wish.
- Top with sour cream, cheese and cilantro.
