See, as much as I love cooking and baking, I don’t enjoy spending a lot of time in the kitchen. Insert: sous-vide beef. I talk more about sous-vide below, but this Cuisine Solutions Sliced Grass-Fed Beef Sirloin comes pre-cooked, meaning you just have to go to the store, purchase it and then it’s already done! Perfectly tender and even more delicious when coated with homemade Mongolian steak sauce.

WHAT MAKES THIS HEALTHY?

Traditional Mongolian beef is made with soy sauce and brown sugar, but in an effort to lighten things up, I opted to use tamari and coconut sugar instead.

Tamari is basically gluten-free soy sauce and the flavor is very similar to actual soy sauce. As far as sugar goes, coconut sugar is said to have a lower glycemic index, meaning it doesn’t spike your blood sugar as much as brown sugar does.

Now, I’m all for brown sugar in desserts, but when I’m making dinner–especially a weeknight dinner–I try to keep things on the healthier side. Honestly, I don’t think you’ll notice a difference in flavor! Because they’re both dark in color, they have a pretty similar flavor, especially when paired with all of the other sauce ingredients in this recipe.

HOW TO MAKE HEALTHY MONGOLIAN BEEF

Since we’re using Cuisine Solutions Sliced Beef Sirloin, this recipe is super quick. If you’re using regular white or brown rice, make sure to cook it now, or ensure it’s already cooked before starting. If you’re using cauliflower rice, it shouldn’t take more than 5 minutes, but make sure to cook it following the package instructions.

Step 1: Make the marinade. The sauce is what gives this recipe all the flavor, so make sure to use all of the sauce ingredients. Whisk the tamari, coconut sugar, garlic, ginger, and arrowroot/cornstarch together in a bowl then set it aside.

Step 2: Prepare the Sliced Beef Sirloin. When you first open the beef from the package, you’ll notice that it’s already cooked. Essentially, you want to heat it up in a skillet so it’s no longer cold, but you don’t want to overcook the beef. I recommend cooking it for 30 seconds over medium heat, then flipping it and cooking for 30 more seconds.

Step 3: Add the sauce. Once the beef is warm, keep it in the skillet and reduce the heat to low. Pour the sauce into the skillet, then let it simmer for 1-2 minutes, stirring so that the beef becomes coated in the sauce. The sauce should thicken fairly quickly–that’s a good thing!

WHAT IS SOUS-VIDE?

Sous-vide technically means “under pressure”. Sous-vide is essentially a cooking technique where you seal food in a plastic pouch then place it in temperature-controlled water for a longer period of time, which results in perfectly cooked meat that’s tender and super flavorful, since all of the juices stay in the plastic packaging.

Ingredients 

for the sauce:

  • 1/4 cup tamari*
  • 1/4 cup coconut sugar
  • 4 garlic cloves, minced
  • 1/2 tsp fresh ginger, grated
  • 1 tbsp arrowroot or cornstarch

Instructions 

  • Whisk sauce ingredients together in a bowl and set aside.
  • Heat a large skillet over medium heat, then add the Sliced Beef Sirloin and cook for 20-30 seconds per side or until it's cooked to your preference. According to the packaging, the recommended cook time is 30-60 seconds per side.
  • Reduce heat to low, then pour the sauce into the skillet. After 1-2 minutes, the sauce should thicken, so be sure to move the beef around so that it gets coated in the sauce. Then, remove the skillet from the heat.
  • Pour rice into a bowl, then top it with the beef and green onions. Enjoy!
