WOWWWW. How the heck have you all been?! I feel like it’s been forever, but I guess that’s what happens when you take a week off from normal life to enjoy beach-pool-resort life. Per the usual, it was wonderful. I’ll recap it, though I didn’t take many photos because most days were the same—the best kind of same of course. Relaxation at its finest. I gotta say, I’m pretty happy to be home, though. As nice as it is to get away, it’s equally as nice if not better to get back into the swing of things.
In order to successfully kick off the week, I’m announcing that it’s officially unofficially PUMPKIN WEEK.
Basically I’ll be posting pumpkin recipes all week long, so hopefully you have your pumpkin pants on. I know for me personally, I’m 100 percent in pumpkin mode until mid-October because by that point. I’m over it. But not this week! This week I’m PUMPKIN EVERYTHING.
So… Puerto Rico. It was pretty identical to last year—we stayed at the same place and ate breakfast at the same restaurant every morning—so not a ton to recap. The one thing we did manage to do was to find a bar in Old San Juan with some of the BEST cocktails. It’s called La Factoria and we quickly learned that it’s one of the top 50 bars in the WORLD. Uhhh….yeah. After drinking a few of their awesomely delicious cocktails, we could see why. Extremely unique and the ambiance of the bar itself was on point.
But enough about vacation—let’s talk about smoothie bowls. Pumpkin smoothie bowls, that is.
This one in particular is extremely thick aka FILLING. One of my least favorite things is eating breakfast and then being hungry one hour later. I promise you won’t have that problem with this. Pumpkin, banana and almond milk make up the bowl itself and then it’s topped with apple, cinnamon, walnuts and chia seeds. So, all of the best things.
Step up your breakfast game–Don’t just drink a pumpkin smoothie, EAT a pumpkin smoothie BOWL.
- ¾ cup pumpkin puree*
- 1 banana
- ½ cup unsweetened almond milk
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ⅛ tsp all spice
- Toppings: whatever you'd like! Recommended: apple, walnuts, chia seeds, cinnamon
- Combine smoothie bowl ingredients in a blender and pulse until smooth.
- Transfer to a bowl and add toppings.
