Ingredients

for the sauce:

  • 1/3 cup Greek yogurt
  • 2 tsp hot sauce
  • 1/4 tsp cayenne pepper
  • 1/8 tsp chipotle powder

for the toast:

  • 4 slices bread I used sourdough
  • 4 eggs
  • 3-4 cherry tomatoes or 1-2 heirloom tomatoes sliced
  • Salt and pepper to taste
  • Microgreens for garnish and extra cayenne pepper if desired

Instructions

  • Make the sauce by stirring all ingredients together in a bowl; set aside.
  • Toast the bread, then top each piece with some of the sauce, a fried egg, a tomato, salt, pepper, and greens.
  • Enjoy!
