Servings: 8
- 1/2 english cucumber grated with moisture squeezed out
- 1 cup greek yogurt
- 2 garlic cloves minced or grated
- 2 tbsp lemon juice
- 2 tsp fresh dill chopped
- salt and pepper
- olive oil drizzle before serving optional
Grate the cucumber overtop of several paper towels, then squeeze as much moisture out of it as possible (I like to do this over the sink).
Place the cucumber, along with the yogurt, garlic, lemon juice, dill, salt, and pepper to a large bowl then stir to combine.
Transfer the sauce to a serving bowl, then drizzle with olive oil and sprinkle with additional dill and black pepper. Serve with pita bread, pita chips or fresh veggies and enjoy!
