Cajun Chicken

- 1.5 lb. chicken breasts sliced in half for 4 total breasts and pounded to even thickness
- pinch of salt
- 1 tbsp cajun seasoning
- 2 tbsp butter
- 2 garlic cloves minced
- 1/2 cup chicken broth
- 1/4 cup heavy cream or sub half and half or milk of choice
If your chicken breasts are large, slice them vertically to create 4 smaller breasts.
Season the chicken with Cajun seasoning and salt.
Melt butter in a large skillet over medium-high heat. Place the chicken smooth side down and cook for 5 minutes, then flip over and cook for 2-5 minutes; transfer to a plate.
Add a splash of broth to the skillet to scrape up the brown bits, then add the garlic and sauté for 30 seconds. Pour in the broth and cream and whisk.
Bring the sauce to a low simmer, then add the chicken back in and simmer for 2-4 minutes until the sauce reduces and thickens slightly. Enjoy!
