Tomato Breakfast Toast
This Tomato Breakfast Toast is made with a spicy yogurt sauce and topped with tomatoes, eggs and greens for a quick, healthy breakfast.

for the toast:
- 4 slices bread I used sourdough
- 4 eggs
- 3-4 cherry tomatoes or 1-2 heirloom tomatoes sliced
- Salt and pepper to taste
- Microgreens for garnish and extra cayenne pepper if desired
Make the sauce by stirring all ingredients together in a bowl; set aside.
Toast the bread, then top each piece with some of the sauce, a fried egg, a tomato, salt, pepper, and greens.
