Tahini and Black Sesame Soba Noodles

Black Sesame Soba Noodles marinated in tahini and a sesame sauce and topped with avocado and broccoli for extra nutrition and flavor! A sweet-flavored dish ready in under 30 minutes.

Ingredients

  • 1 package soba noodles approx. 8 oz
  • 1 head of broccoli
  • 1/4 cup black sesame seeds
  • 1/2 cup sesame seed oil
  • 2 tbsp cane sugar or white sugar
  • 2 tsp mirin*
  • 2 tbsp tahini
  • Sesame seeds and avocado for garnish

Instructions

  • Bring a pot of water to a boil and cook soba noodles.
  • Place broccoli in a separate pot with water and bring to a boil.
  • While the noodles and broccoli are cooking, make the sauce. Do so by heating the sesame seeds and 1/4 cup of the sesame oil in a skillet over medium heat. As soon as the seeds start sizzling a bit/becoming hot, transfer to your blender.
  • Add the rest of the sesame oil, sugar, mirin, and tahini to your blender and pulse until everything is mixed together really well.
  • Drain your noodles and broccoli and put them in a large bowl; pour the sauce overtop and mix everything together.
  • Garnish your dish with extra sesame seeds and avocado.
  • Enjoy!

Notes

*If you don't have mirin on hand, you can use rice vinegar instead
