Slow Cooker Chicken Fajitas

Enjoy these Slow Cooker Chicken Fajitas for a quick, hands-off family dinner! Boldly seasoned chicken breasts are cooked with peppers, onions, and tomatoes to give you a hearty filling to layer on tortillas with your favorite toppings.

Ingredients

  • 1 red bell pepper thinly sliced
  • 1 orange bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 1 small onion thinly sliced
  • 3 garlic cloves minced
  • 3 chicken breasts
  • 14 oz. fire roasted tomatoes drained
  • 1 lime

For the fajita seasoning:

  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the toppings:

  • flour tortillas
  • avocado
  • pico de gallo
  • sour cream
  • shredded cheese

Instructions

  • If you haven’t already, start by making the fajita seasoning by combining all of the ingredients in a small bowl.
  • Add half of the peppers and onion to your slow cooker, then place the chicken on top. Sprinkle both sides of the chicken with the fajita seasoning, then top with the tomatoes, garlic and the remaining peppers and onion.
  • Cook on HIGH for 3-4 hours, then add juice from ½ the lime and add more as desired.
  • Use two forks to slice or shred the chicken, then assemble your fajitas using your desired toppings. Enjoy!
