Sardine Salad

Move over, tuna salad! This easy Sardine Salad is a rich and savory lunch or snack made with canned sardines, mayo, red onion, lemon juice, and simple seasonings. It’s budget-friendly and packed with protein!

Ingredients

  • 2 tins sardines preferably in lemon or olive oil, drained
  • 2 tbsp mayo
  • 2 tbsp lemon juice
  • 2 tbsp red onion diced
  • Pinch salt and pepper

Instructions

  • Add the sardines to a bowl and LIGHTLY mash them (if you mash them too much the overall salad will be too mushy).
  • To that same bowl, add the mayo, lemon juice, red onion, salt and pepper and lightly mash to combine.
  • Enjoy on top of mixed greens, or eat with your favorite crackers. Enjoy!

Notes

NOTE: I like making this for a super quick lunch, and since it serves 2 you can either make it for you + your spouse/roommate/sibling/friend, OR you can make them both for yourself so you don’t have to worry about lunch the next day
