Sardine Salad
Move over, tuna salad! This easy Sardine Salad is a rich and savory lunch or snack made with canned sardines, mayo, red onion, lemon juice, and simple seasonings. It’s budget-friendly and packed with protein!

- 2 tins sardines preferably in lemon or olive oil, drained
- 2 tbsp mayo
- 2 tbsp lemon juice
- 2 tbsp red onion diced
- Pinch salt and pepper
Add the sardines to a bowl and LIGHTLY mash them (if you mash them too much the overall salad will be too mushy).
To that same bowl, add the mayo, lemon juice, red onion, salt and pepper and lightly mash to combine.
Enjoy on top of mixed greens, or eat with your favorite crackers. Enjoy!
NOTE: I like making this for a super quick lunch, and since it serves 2 you can either make it for you + your spouse/roommate/sibling/friend, OR you can make them both for yourself so you don’t have to worry about lunch the next day
