Mushrooms are made gourmet in this easy Roasted Mushrooms recipe. A simple blend of herbs, seasonings, and balsamic vinegar complements their earthy flavors and makes them a delicious side dish or topping to pair with dinner.
Preheat the oven to 450° F. Wash, dry, and cut mushrooms into fourths (quartered), then transfer to a large bowl.
Toss mushrooms in the olive oil, 1 tbsp of balsamic vinegar, thyme, salt, garlic powder, and pepper. Transfer the mushrooms to a large parchment-lined baking sheet. Spread evenly along the baking sheet.
Bake the mushrooms for 10 minutes, toss the mushrooms around, and then bake an additional 10-12 minutes or until browned.
Drizzle the additional ½ tbsp of balsamic vinegar over the top of the mushrooms and top with chopped parsley. Enjoy!
