Roasted Mushrooms

Mushrooms are made gourmet in this easy Roasted Mushrooms recipe. A simple blend of herbs, seasonings, and balsamic vinegar complements their earthy flavors and makes them a delicious side dish or topping to pair with dinner.

Ingredients

  • 16 oz cremini or baby bella mushrooms quartered
  • 2 tbsp olive oil
  • 1 1/2 tbsp balsamic vinegar divided
  • 2 tsp fresh thyme
  • 3/4 tsp salt
  • 3/4 tsp garlic powder
  • 1/4 tsp black pepper
  • chopped parsley for topping

Instructions

  • Preheat the oven to 450° F. Wash, dry, and cut mushrooms into fourths (quartered), then transfer to a large bowl.
  • Toss mushrooms in the olive oil, 1 tbsp of balsamic vinegar, thyme, salt, garlic powder, and pepper. Transfer the mushrooms to a large parchment-lined baking sheet. Spread evenly along the baking sheet.
  • Bake the mushrooms for 10 minutes, toss the mushrooms around, and then bake an additional 10-12 minutes or until browned.
  • Drizzle the additional ½ tbsp of balsamic vinegar over the top of the mushrooms and top with chopped parsley. Enjoy!
