Roasted Cabbage Wedges

Turn cabbage into the star of the meal with this recipe for Roasted Cabbage Wedges! These wedges are golden and caramelized on the outside and sweet, nutty, and tender on the inside. Serve them with a drizzle of garlic aioli on top for a delicious vegetarian side or main dish.

Ingredients

For the cabbage:

  • 2 tbsp olive oil
  • 1 medium head green cabbage cut into wedges
  • salt and black pepper
  • lemon juice to taste optional

For the sauce:

  • 3 garlic cloves minced
  • 1 1/2 tsp lemon juice or to taste
  • pinch of salt
  • 1/3 cup mayo

Instructions

  • Preheat the oven to 400° F and line a baking sheet with parchment paper.
  • Cut the cabbage head in half vertically and then cut each half into 4 wedges (total of 8 wedges). Place the wedges on the baking sheet and then drizzle them with olive oil, salt, and black pepper.
  • Roast in the oven for 20 minutes, remove from the oven, carefully flip over and roast for an additional 15-20 minutes or until the cabbage is very roasted and almost charred.
  • While the cabbage wedges are cooking, make the garlic aioli sauce. Add all ingredients to a small bowl and whisk together.
  • Once the cabbage wedges are done, remove from the oven and drizzle on the garlic aioli. Enjoy!
