Paleo Sweet Potato Bars

These Paleo Sweet Potato Bars are made with mashed sweet potato, almond flour and topped with a sweet maple almond drizzle.

for the bars:

  • 3/4 cup sweet potato mashed* **
  • 1 egg
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • Topping: 1/4 cup walnuts chopped and 2 tablespoon pepitas

for the glaze:

  • 1 tablespoon almond butter
  • 3 tablespoon maple syrup


  • Preheat oven to 350°. Grease an 8x8 baking dish OR line it with parchment paper and set aside.
  • Combine mashed sweet potato, egg, almond butter, and syrup in a bowl; then, add flour, baking powder and cinnamon and stir to combine.
  • Scoop mixture into your baking dish, using a rubber spatula or spoon to smooth batter out, then add the walnuts and pepitas, using your hands to gently press them into the top of the batter.
  • Bake bars for approximately 35 minutes or until a toothpick comes out clean.
  • While bars are making, make the glaze: simply whisk almond butter and syrup together.
  • Drizzle the bars with the glaze after cutting and before serving.

*make sure to peel the skin off the sweet potato before cooking
**I recommend cooking 2 sweet potatoes and then mashing. You may have some leftover, but it's better to have leftover mashed potatoes than not enough!
