Pumpkin Pasta

Ingredients

  • 1 lb. pasta
  • 1 lb. spicy Italian sausage chicken sausage or pork sausage
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup yellow onion diced
  • 4 garlic cloves minced
  • 1 tbsp fresh sage chopped
  • 1 1/2 cups chicken broth
  • 1 cup pumpkin puree canned; make sure to use pumpkin, not pumpkin pie filling
  • 1/2 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes or more to taste
  • 1/2 cup parmesan cheese freshly grated
  • 2 cups spinach chopped

Instructions

  • Bring a large pot of salted water to a boil, then cook the pasta until it is al dente. While the water is coming to a boil, heat olive oil in a large, deep skillet over medium heat. Then, remove the sausage from the casing and cook it with the oil, using a wooden spoon to break it up. Cook it until it's no longer pink and slightly crispy, then remove it with a slotted spoon; set aside. Once the pasta is done, reserve 1/2 cup of the pasta water, then drain the pasta.
  • Next, add the butter to the skillet. Once it melts, add the onion and garlic and sauté for 5 minutes, then add the sage and sauté for 1 minute.
  • Pour in the chicken broth, pumpkin, heavy cream, salt, and red pepper flakes and whisk to combine. Bring to a low boil, then sprinkle in the parmesan cheese and whisk until the sauce thickens. Reduce heat to low, then stir in the spinach until it wilts, about 2 minutes. If the sauce seems too thick, pour in some of the reserved pasta water to thin it out.
  • Last, add the cooked pasta and sausage to the pot and stir to combine. Garnish with additional parmesan and enjoy!
