Pistachio Butter Cups

These sweet and chocolatey Pistachio Butter Cups stuff homemade pistachio butter in a luscious chocolate shell to put a twist on classic peanut butter cups!

Ingredients

  • 2 cups dark chocolate chips
  • 1 1/2 tbsp coconut oil
  • 1 tbsp honey or agave syrup
  • 1/2 cup pistachio butter
  • pinch of salt

Instructions

  • Line a muffin tin with cupcake liners and set aside.
  • Melt coconut oil, honey, and chocolate chips in the microwave in 30 second intervals, stirring until smooth and melted chocolate is achieved.
  • Distribute half of the chocolate amongst the cupcake liners, then add half a tablespoon of pistachio butter in the middle then top with the remaining chocolate. Sprinkle each one with sea salt.
  • Transfer cups to the freezer to set for at least 1 hour. Enjoy!
