Moroccan Chicken

This one-pan Moroccan Chicken recipe has the same magic as a slow-simmered Moroccan tagine without any of the fuss! Made with tender, well-seasoned chicken thighs nestled in a deeply flavorful, floral sauce, it’s pure comfort food.

Ingredients

  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp ginger
  • ½ tsp salt
  • ¼ tsp coriander
  • tsp cinnamon
  • 1.5 lb bone in skin on chicken thighs
  • 1 tbsp olive oil
  • ½ onion diced
  • 1 carrot diced
  • 2 garlic cloves minced
  • 1 tsp fresh ginger minced
  • 2 tbsp tomato paste
  • ½ lemon zest and juice
  • 2 cups chicken broth plus more as needed
  • 1 can chickpeas drained and rinsed
  • ½ cup green olives
  • ¼ cup cilantro

Instructions

  • Combine the paprika, cumin, ginger, salt, coriander, and cinnamon together in a small bowl, then rub HALF of the spice mixture all over the chicken.
  • Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken skin-side down and cook for 5 minutes. Then, use tongs to flip the chicken over and cook for 4 more minutes. Transfer the chicken to a plate.
  • Add the onion and carrot to that same skillet and sauté for 5 minutes, then add the garlic, ginger, tomato paste, and the remaining spices and stir continuously for 1 minute.
  • Next, add the lemon zest and juice, along with the chicken broth and chickpeas and stir to combine, scraping up any brown bits on the bottom of the skillet.
  • Nestle the chicken skin side up into the chickpea mixture, then cover the skillet and simmer the mixture for 15-20 minutes or until the chicken is cooked through. If the sauce starts reducing too much, add a little more chicken broth.
  • Last, remove from the heat, then stir in the olives and cilantro. Serve as-is or over rice and enjoy!
