Healthy Peanut Butter Rice Crispy Treats

Servings: 9 large bars (or cut into 16 smaller bars)
- 1 cup all-natural peanut butter
- ⅓ cup maple syrup
- 2 tbsp honey
- 1 tsp vanilla
- Pinch salt
- 3 ¼ cups rice crispy cereal
- ⅓ cup mini chocolate chips
In a large bowl, stir the peanut butter, maple syrup, honey, and vanilla together. Then, pour in the rice crispy cereal, chocolate chips and salt and use a rubber spatula to stir to combine.
Line an 8x8 pan with parchment paper, leaving a 1" overhang for easy removal, then spray the sides of the pan with nonstick spray. Transfer the rice crispy mixture into the pan, using the spatula to smooth out the top.
Place the pan in the freezer for at least 30 minutes to allow the bars to harden. Remove, slice into 9 large bars or 16 smaller bars and enjoy! Store bars in a sealed container in the refrigerator for up to 1 week.
*Use all-natural peanut butter with only peanuts and salt as the ingredients. You also want the peanut butter to be a tad runnier/not as thick.
*If you don’t want to use honey, opt for brown rice syrup instead.
