Crockpot Scalloped Potatoes and Ham

Ingredients

  • 6 russet potatoes peeled and thinly sliced
  • 3/4 cup onion diced
  • 2 cups milk
  • 1/4 cup all purpose flour
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1 cup shredded cheddar cheese
  • 2 cups ham diced
  • 1 cup chicken broth
  • 1/2 tsp salt plus more to taste
  • 1/2 tsp black pepper
  • fresh parsley for garish optional

Instructions

  • Place the potatoes and onion in your slow cooker. Then, in a bowl or glass measuring cup, whisk the milk, flour, garlic powder, and thyme together.
  • Pour the milk mixture over the potatoes. Then, add the cheese, ham, chicken broth, salt, and pepper on top and give the whole mixture a gentle stir.
  • Cook on HIGH for 3-4 hours or until the cheese has melted and the potatoes are fork tender. Cook time varies depending on how thinly you slice the potatoes.
  • Spoon mixture onto plates, garnish with parsley (optional) and enjoy!
