Cottage Cheese Mashed Potatoes

Ingredients

  • 8 Yukon gold potatoes chopped into 2" pieces
  • 1 cup cottage cheese
  • 1/4 cup milk of choice or more if you want smoother potatoes
  • 1/4 cup butter
  • 2 tbsp chives chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Add the potatoes to a large pot, then fill the pot with water so that it covers the potatoes by one inch. Bring them to a boil and continue boiling until the potatoes are fork tender, about 10-15 minutes. Drain, then place the potatoes back in the pot.
  • While the potatoes are boiling, add cottage cheese and milk to a blender. Blend until smooth and set aside.
  • Add the cottage cheese mixture to the potatoes along with the butter, chives, salt, and black pepper. Using a hand mixer, mix the potatoes together until smooth. Add more salt and black pepper to taste. Enjoy!
