Cherry Tomato Pasta Sauce

Ingredients

  • 1/3 cup olive oil
  • 4 cups cherry tomatoes
  • 6 garlic cloves minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup fresh basil chopped
  • 1 tsp sugar

Instructions

  • Pour the olive oil into a large skillet and heat over medium heat. Once warm, add the tomatoes and sauté for 5-7 minutes, then add the garlic, salt and pepper and simmer the entire mixture for 15-20 minutes until the tomatoes are soft. NOTE: you may want to use the back of a wooden spoon to help smash down the tomatoes a bit more.
  • Last, add the basil and sugar and simmer for 2-3 minutes, then remove from the heat.
  • Serve immediately over pasta, or transfer to a container and store in the refrigerator or freezer to use at a later time. Enjoy!
