Brussels Sprouts Slaw

This Brussels Sprouts Slaw is made with simple ingredients like brussels sprouts, red onion, and cheese, and is coated in a slightly tangy & sweet vinaigrette. Zero cooking is required and it's ready in under 15 minutes!

Ingredients

For the slaw:

  • 1 lb. brussels sprouts shaved
  • 1/2 cup red onion thinly sliced
  • 1/3 cup dried cranberries or cherries
  • 1/3 cup pumpkin seeds
  • 1/3 cup slivered almonds

For the dressing:

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tbsp dijon mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Start by making the dressing: whisk all ingredients together in a bowl or glass measuring cup and set aside.
  • Next, shave the brussels sprouts either by hand or in your food processor, then transfer to a large bowl.
  • Add the remaining slaw ingredients to the bowl, then pour HALF of the dressing overtop and use kitchen tongs to toss. Add more dressing as desired and enjoy!
