Apple Cinnamon Pancakes

- 2 eggs
- 1/2 cup applesauce
- 1/4 cup maple syrup
- 1/4 cup almond milk
- 1 tsp vanilla
- 1 cup white whole wheat flour
- 1/2 tbsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 2 apples diced
- 1 tbsp coconut oil
- 1 tbsp sugar
- 1/2 tsp cinnamon
Whisk eggs, applesauce, maple syrup, milk, and vanilla together in a large bowl.
In a separate bowl, stir the flour, cinnamon, baking soda, and salt together. Then, add the dry ingredients to the wet then gently stir together with a rubber spatula; set aside.
Meanwhile, heat coconut oil in a medium skillet over medium heat. Once it’s melted, add the apples, then sprinkle the sugar and cinnamon overtop. Cook the apples, stirring occasionally until soft, about 5 minutes; turn off the heat.
Spray a griddle or large skillet with nonstick spray, then heat over medium-low. Use a ¼ cup measuring cup to scoop the batter out and cook the pancakes for 2-3 minutes on the first side, then flip over and cook for 1-2 minutes on the second side.
Serve the pancakes with the apples, along with extra maple syrup. Enjoy!
